Bad Venison Summer Sausage

I had some summer sausage made from a deer my son shot. I had the butcher add pork? I let it thaw out in fridge not the counter. There is no taste to it at all very very bland. I haven't talked to my butcher yet. Is there anything he could do?

Is there any way that I could salvage it?

i would bring it back and ask for your money back. there is nothing wrong with pork being used for summer sausage. the question would be how much. it also comes down to seasonings used. summer sausage in my opinion should not have much fat in the mix although you do need some. i dont know how the place you took your meat to operates, but this is not a way to build a reputation. maby it's time to consider making it yourself. we will help you here on the cooking forum if you do decide some day. if not, there are threads in the cooking forum where people recommend different places to bring your meat. good luck.

Not much you can do once it's made.I also would take it back and let them taste it and ask for my money back.I would also look for a new place to take it mext time.

Did you taste some that they made ahead of time?When I am considering making or haveing them make it,whether it's jerky,sticks,summer sausage,etc,I buy some from them and taste it.Then if they screw up you can have them compare it to what they sell.It's a small price to pay for getting a large amount that you don't like.

I did that this year when I was considering buying a butcher's shop seasoning mix for deer sticks.I bought 3 pkgs of sticks with different seasonings from them and had my family taste them and pick one.Worked out great.Made the pepperoni pizza sticks with mozzarella this past weekend.

I have used the same butcher for the past 15 years for my smoked venison meats.

One year, I took an older buck in to him and had him do the whole deer.

It was a larger buck that was old and gray.

When I got the meat, I did not like anything from it and had some others taste it and they said it was very strong with a taste of venison.

I could not eat any of that deer and threw it away. About $300 for the butchering but it was terrible.

I have always been very happy with everything he has done for me but that one old buck. I did not say anything to him and blamed it in the old swamp non corn fed buck.

In my case, I believe it was simply the meat.

That is also why since I shoot only does for tablefare.

I butcher and process my own but I know I sure as he'll wouldn't bring it anywhere that didn't give my own meat back. I have seen the way some people treat their venison. I know there are places up here that give you back what you brought in. That would be the first thing I asked.

Thats the biggest reason my group decided to start processing our own. I just don't like the idea that I may get some other deer and that I don't know how that deer was treated.

Besides processing your own is another fun thing to do at deer camp. We hunt during the day and process at night. Go to sleep, wake up and repeat the process.

Cant dispute anything you say Harvey. But do you really think we get our own meat back? Just a thought.

The butcher shop I use and have used for the past 15 or so years I really do believe I get my own meat back. I am sure that is not the case in many shops but I am very confident I get mine back.

The butcher tells me every year I should leave more fat on my meat as I have it so lean. I tell him use more beef fat.

He is a friend and I doubt he would do me wrong.

Olson's Meat in Woodville WI does use your own meat as long as you do in 12.5 lb ratios. I have had fantastic luck with their products. I make my own fresh sausage, but have no problem taking my trim in for their summer suasage and sticks.
