I like carved tails there easier to make than a metal tail plus I personally think it looks better. I make my nords with a thick tail and I love the way it looks plus its durable for pike attacks! You mentioned wood, try box elder, as it has a nice smooth grain, its easy to carve and shape, and is free from the woodpile (I have plenty if you want some).
