deerminator Posted February 11, 2011 Share Posted February 11, 2011 You don't want to cook venison past anything other than slightly pink in the middle. The exception being for very young children or old fogies and in the latter, well, they've lived a good life. Just kidding of course on that. When our kids were younger, we'd cook their's for just a bit longer but just until it wasnt pink any longer and then removed it from the heat. If you choose to marinate, which I usually do, try to compliment, not mask the venison taste. I hate it when someone says it tastes like beef. Heck, I don't like even just being able to take one deer in my area. I'm thinking I'll have to make a doe hunt up north next year or something. Just made some steaks from two seasons ago last night. Forgot I had them buried in the freezer under this year's! But wrapped well they were still very good. Little bit of marinade in a freezer bag. Toss and let sit for an hour and then put on a screaming hot grill for about 2 minutes each side. Served with steamed asparagus and mushrooms and a side salad. Mmmmmmm. So that was how I spent my life thinking about venison. It took my husband and a great cookbook to figure out how to cook it well. Er, rare. Oh, you know what I mean.
