Cooking venison

You don't want to cook venison past anything other than slightly pink in the middle. The exception being for very young children or old fogies and in the latter, well, they've lived a good life. Just kidding of course on that. When our kids were younger, we'd cook their's for just a bit longer but just until it wasnt pink any longer and then removed it from the heat.

If you choose to marinate, which I usually do, try to compliment, not mask the venison taste. I hate it when someone says it tastes like beef. Means I did it wrong in that instance. : )

If you want a good venison tenderloin or steak recipe/demonstration, head to google and type in "gordon ramsey venison peppers." Good video that shows how to cook venison til its "springy" and a good marinade that doesn't overwhelm the taste of the meat.

No one gives me venison either which made the one year I didn't get a deer suck big time. Heck, I don't like even just being able to take one deer in my area. I'm thinking I'll have to make a doe hunt up north next year or something. Just made some steaks from two seasons ago last night. Forgot I had them buried in the freezer under this year's! But wrapped well they were still very good. Little bit of marinade in a freezer bag. Toss and let sit for an hour and then put on a screaming hot grill for about 2 minutes each side. Served with steamed asparagus and mushrooms and a side salad. Mmmmmmm.

Cooked any more than med - med rare and it will be tough and chewy. No, you will NOT get worms. Geez, with rumors that flying around, it's no wonder so many people think they don't like venison.

+1 here too. The very first venison I EVER had was a pan-fried steak done to within an inch of its life. I could barely chew it. So that was how I spent my life thinking about venison. eek

It took my husband and a great cookbook to figure out how to cook it well. Er, rare. Oh, you know what I mean. I've got a few wonderful recipes that do the meat justice.

Venison is a lot like scrambled eggs... If you think its done then its overcooked. Pull it off before you think its done.
