Looking for anything that isn't a daily chore. I've heard of wrapping them in bacon and grilling them, but figure there would be more to it then that, maybe not. I have a Ring-necked Duck filleted breast roasting in the oven in a covered baking dish with garlic soup mix, carrots, and a cup of water right now. I'm cooking wild rice separately as a side. Ralph Wiggum Posted October 5, 2010 Share Posted October 5, 2010 Here's what I have done. People that don't like duck even like these.Breast out the duck(s) and cut the breast into strips. Soak the strips overnight in apple juice in the fridge. Then, slice up some jalapenos. Double up a strip of breast meat with a similarily sized piece of bacon and wrap it around a slice of jalapeno. motley man Posted October 5, 2010 Share Posted October 5, 2010 I skin the ducks and brown them in dutch oven pot, put in potatoes, carrots, onions, and 2 cans mushrooms. Simmer four hours or more and meat falls off the bone. Simple and good tasting. This also works for rabbit, squirrel, or any type of wild game. Gissert Posted October 14, 2010 Share Posted October 14, 2010 We like to take the brest meat, and cut it into cubes. Put it in a ziplock bag with Itialian salad dressing for several hours. Then wrap with bacon and skewer.Grill (I prefer charcoal, less flare ups) until the bacon is just starting to crisp. The duck should be medium to medium rare. Chipotle sauce.Butterfly the breastsSlit and remove seeds of thumb size jalapenosStuff jalapeno w/cream cheesePut jalapeno in breast and wrap shut w/baconTooth pick to hold shut and hold bacon on Grill till bacon is crispy, of course better w/charcoalThe hands down best duck recipe I have had/made. I did that with a goldeneye today. Except this time I had potatoes instead of carrots. Turned out fantastic and tender....with almost zero prep time.
