Fish Head Posted June 17, 2010 Share Posted June 17, 2010 I just got back from Alaska and I've brought home a ton of halibut. Anyone have a great halibut recipe? I think lightly seasoned an pan seared is hard to beat. I've heard grilling halibut is a great way to prepare it, but I'm worried about it flaking apart on the grill. shortfatguy Posted June 18, 2010 Share Posted June 18, 2010 This recipe comes from a lodge in Alaska.Cut the halibut into bite sized pieces. spread miracle whip on one side of the pieces. In a frying pan carmelize sliced red onions. After the onions are carmelized place the halibut on top of the onions in the pan with the miracle whip side down. While the halibut is frying brush miracle whip on the side that is facing up in the pan. After the miracle whip is brushed on sprinkle fresh chopped dill onto the fish(dry dill will work). after the bottom side is cooked flip the side with dill on it down and cook until done. jwmiller33 Posted June 18, 2010 Share Posted June 18, 2010 i am in alaska right now.. 8th day of our 10 day trip... we went for halibut 2 days so far and we have 330lbs of halibut filets to pick up a the processor on our way out of town, and that is 6 peoples limits on 2 days, so 24 fish worth of filet poundage.... i caught a 105 pounder which was an amazing fight! i'll have to try that recipe! anybody have any more recipes? i'm going to have a bunch of meals to try this on! I leave the halibut in a steak size piece and put it on the Brinkman smoker with a little apple or cherry wood (not much smoke) let it go for 45 min and then brush on a mixtur of butter, dill & sriracha sauce. cvanderweyst Posted June 18, 2010 Share Posted June 18, 2010 i cube it up, and wrap the cubes in bacon, then put them on a kabob and grill, lightly baste with barbecue sauce.Or spray grill grate with cooking spray and grill whole halibut steak directly on the grill grate. I like to baste with butter an season with sal pepper an red pepper. This is a good quick meal because you can grab a frozen vacum packed filet and throw it in the sink with some water and it thaws very quickly then throw it on the grill with almost no prep time, grill, and enjoy. LABS4ME Posted June 18, 2010 Share Posted June 18, 2010 Spread butter on both sides of fillet, get a good charcoal fire going in your grill, lay foil on grates.Season fillet lightly with season salt of your choice and crushed black pepper. Finely mince a couple of cloves of garlic and put on top of fillet. I'll try the foil on the grill... maybe some cedar plank grilling too? So far I've been pan searing them in a little butter/olive oil with just a little seasoning salt. Yum!JWMiller- enjoy the rest of your trip! I have about 80 pounds of halibut in my freezer right now. Plus I have about 30 pounds of salmon and rock fish. BuschPilot Posted June 22, 2010 Share Posted June 22, 2010 I like to cube my halibut up so they are about 1-1/2" sq. and then i soak it in milk and then i use a frying magic fish batter on it. a quick dip in the peanut oil and it turns out great. I cook it every year for the guys at camp and never have enough. i add a bit of garlic salt to the mix too along with some pepper as well!! Great stuff!
