picksbigwagon
anyone here ever make their own smokehouse? Not a reworked fridge or freezer but an actual smokehouse. We are kicking around the idea of building a smokehouse at a friends place down in Iowa and I found stuff on the internet but looking for first hand (if the internet is first hand I guess) information/hints/suggestions)
prov1900
And please provide pics!!! I am wanting to do the same. Picks, I saw one a while back. It was basically a barrel design on wheels. To the untrained eye, it looked like any commercially sold horizontal barrel smoker. This thing was state of the art, built to take a direct hit from a bunker buster, and is designed to do everything from cold-smoked salmon to ribs to grilling steaks. If I can ever get some pics, I will. This is a trailerable one. I've always wanted to do one with bricks, etc. I have a perfect place to put one, just need some ideas myself. My goal is to be able to cold-smoke/cure stuff, plus be able to use for more routine smoking, i.e. ribs, pork shoulders, etc.
MN Mike
How elaborate do you guys want to get? I don't have any first hand info on these but they sure give you some ideas.Google " NDSU Smokehouse " and you should get a link to Misc plans, there are 3 designs in there, the 3rd one is pretty interesting. Also google " Build your own smokehouse " you should see a link to UConn, that's a little simpler design but good pictures.Mike
picksbigwagon
MN Mike, already did the google and found the Uconn site, there was also a really cool looking on on a cowgirl and the country life site of somtehing like that. I will make sure that we take pictures too. with prices of hogs being rock bottom right now, it would kind of nice to grind up a hog or three and spend a weekend smoking sausages....... Big Dave2
How much stuff do you want to be able to do at a time? Do you want to do whole hogs or just some racks of ribs for supper? If your not looking to do large amounts at a time, you could build a simple UDS from a 55 gallon drum. They keep temps very well.
bbqhead
You got a pic of your UDS?randy
picksbigwagon
we are looking at least a pig, probably not 2 or more though. Another friend wants to put one at his farm and he is already leaning towards the 6x8 foot NDSU one. we are gonna start with the smaller one and then graduate I guess. I already have a propane one for hot smoking, we are looking at weekend smoke for pigs and home made sausage

terryt
i build one out of a semi sleeper approx. 5x8 will hold about 300 lbs of sausage and whole smaller hogs 150lb range but am thinking about putting a rottiserie in in to handle larger hogs. sorry dont have pics yet but will take some once i get to my parents place where the smoker is located. I also put on a trailer frame so it is portable.
picksbigwagon
That sounds awesome!!!!!Terryt, we are all intrigued, the sooner you get those pictures up the quicker we can build a smoke house. Did you insulate it at all?
terryt
yes i insulated it with fiberglass insulation then lined it with aluminum sheeting
Smoker
I built one like on the Cowgirl site. I made some changes to it lika a nice cement slab and a little over hang on the front and a few other things. It works great. One tip is if you live in cold weather and use the barrel line it with fire brike. It makes a big differance. I finished it last fall and did a few trial runs and then did 6 turkeys and 6 chickens and still had room for more. If I can find out how to put pictures on here I will post some. Riich
I'm working on a PDF file that will give you the complete skinny on how to build one, it should be ready in a day or two. I just emailed the folks here to see how to post a PDF file, anyone else know how to do that? If I can't post it that way I will email it to anyone that wants it.Just give me a couple of days. Steve Foss
Take the pdf file and save it in Acrobat or Photoshop as a jpeg, then simply post it like you'd post any other photograph. If it's too long to work as a single jpeg, you can crop out the equivalent of a page at at time in Photoshop, save each one as a jpeg and then post them that way. I'm interested in seeing it, too. Double D
Some friends of mine picked up an old outhouse off of an old farmers place and converted it. They looked at it and decided it was about the right size. It works well and their recipe for "Sh!thouse Deer Sausage" is pretty good. And if they burn it down by accident they're not out anything.DD
