LABS4ME Posted February 8, 2008 Share Posted February 8, 2008 Try this one... pretty darn tasty! Did it with some walleye from Red and some pike I speared. MMM MMMPlace 4-6 fillets in a glass baking dish, dot each fillet with 1 tblsp butter (I just put 3-4 real small dabs of butter on top of each fillet)Thoroughly blend 1 cup milk and 2 tblsp flour in saucepan, cook over medium heat till sauce thickens and bubbles... stir constantly so it does not scorch!Remove from heat. Stir in 1/4 tsp salt, 1/8 tsp pepper, 1/4 tsp garlic salt, 1/8 tsp thyme dash of oregeno and 1/4 cup chopped green onions Pour sauce over fish and lightly sprinkle with Paprika. I also Squeeze a little fresh lemon juice over fillets..Bake uncovered 25 minutes at 350 degrees. Tom Linderholm Posted February 8, 2008 Share Posted February 8, 2008 Depending on the fish & size many different cooking techniques offer healthy advantages.There have been posts on cedar planking which will impart great flavor and texture to most of your larger filets.Grilling is often a something I do at home quite often by forming a pouch with foil spreading a small amount of mayonaisse accross the top with different flavorings.Sauteeing offers a great opportunity to cook your fish and offer a crisp texture to it while minimizing the amount of oils imparted into the fish. Just use a nonstick pan and whatever seasoning you prefer.You can also bake your fish in a multitude of different ways simply by broiling with a bit of lemon and butter Tt steaming your fish in a parchment pouch with a little lemon and white wine.Last but not least for your larger thicker filets such as Salmon poaching them in a 30/70 white wine & water with a bit of old bay and a few halved lemons will get you an entirely different end product.These are a few different approaches to get you started and I am sure others will chime in with specific methods and recipes.Good Luck and Enjoy! Windy City Walleye Hunter Posted February 8, 2008 Share Posted February 8, 2008 I have shot this one out before but will do so again. It is my youngest son's favorite way to enjoy our walleye. Slice some thick (1/4 to 1/2 inch)slices of yellow or white onion and line the entire bottom of a baking dish with the slices. Do not seperate the rings of slices keep them solid. They will form a bottom to prevent burning the fish and will carmelize nicely. Then top the layer of onions with a layer of walleye or perch fillets then put in a layer of thin sliced lemons and repeat until you get to the top of the pan. Cover and bake until done. The bottom onions will burn and carmelize (yummy) and the middle onions will get tender. Enjoy with whatever starch strikes your fancy. LABS4ME Posted February 9, 2008 Share Posted February 9, 2008 Prov -I almost forgot about blackened fish... I use Chef Prudhommes blackened redfish seasoning.... Dang that stuff is good! I agree, a cast iron skillet blazing hot works the best! Dip each side of the steak (Great on filets, but cheaper cuts are great too) in melted butter, cover both sides generously with the seasoning, then place in very hot cast iron skillet (no oil). (Do this outside). 4 minutes a side for medium rare. Awesome. It is about the only way I do steak anymore. (Sorry about the slight thread high-jack)And as usual, wash down with your favorite suds!! Mix filets in a bowl with a spoonfull or two of ranch dressing, Just enoung to give em a coat. I used lite ranch... Lay the fish out on a sprayed baking dish or tray. Hit them with a little salt and pepper. Sprinkle on some parm cheese and put em in a 400 degree oven for about 8 min or until they flake apart... I also have some grilling racks that are designed for fish or veggies and we'll grill walleyes from time to time to get out of the fried rut. You can put almost anything on em. A quick easy marinade of some OJ, a bit of honey, some chopped garlic, and S&P works well. Or just sprinkle em with some lemmon pepper seasoning, or chipotle seasoning, or any sprinkle seasoning you like... Quick, easy, differnt, and good. Lunger Posted February 19, 2008 Share Posted February 19, 2008 Here's an easy one that is really good-Get 3 or 4 lemons and slice them about 1/4" thick, cover the bottom of a cookie sheet with the lemon slices(cookie sheet must have a lip all the way around)then lay your fillets on the bed of lemon slices, melt some butter and use a brush and wipe each fillet with the butter, sprinkle them with you favorite saeaon and then put in the oven on broil right below the element, I keep the door cracked a bit so the element is orange the whole time, they only take about 5-8 minutes and are real good. MattL Posted February 19, 2008 Share Posted February 19, 2008 I just tried something different today than my usual deep frying, and it was alot easier..maybe even my new favorite thing to cook. I think that alot of these recipes I have read sound really good, but normally I don't have a lot of time to cook a whole meal. This is quick, simple and tastes amazing. I just lined a pan with foil lightly buttered it, added about 5 or six panfish fillets and seasoned with lemon pepper. Cooked in oven at 350 until done. It was very tasty, cleanup was alot simpler, and the house didn't smell like oil.Lunger I think I might also try your idea of the lemon slices next time that sounds like a good idea!
