How do you cook your fish, Recipe?

Check out the recipe forum.. You will find a lot of stuff there! Its new the bottom of the forums! I cook it a ton of different ways. Fry it, bake it, grill it.. all the above..

This is ultra easy and ULTRA good..

Fillet fish.

Take a small dab/handfull of mayo..and rub fillet down. You wanted it coated, but not thick.

Place fillet on a baking sheet, and salt and pepper. Then put a healthy sprinkle of Parmisean cheese.. The real stuff, not the can stuff.

Put in the broiler for 6-7 m,ins until golden brown... Done!

Deitz dude, that sounds pretty good.

I am the old fashioned fry it up in any kind of batter you can find kinda guy. The only one I don't have mastered is beer batter, and I know I need some practice on that one. My favorite new find for batter is Andy's Fish Breading from fleet farm. Great stuff, the red breading has spice, but not like cajun shorelunch. Really great flavor.

Dip the fillets in cooking oil...just a light coating.

Place them in glass baking dish.

Sprinkle with shredded cheddar cheese and crumbled potato chips (plain is fine, I prefer to use sour cream and onion flavor).

Bake for about a half hour at 350*.

Dill weed and tarragon are two herbs that go really good with fish prepared just about any way. You can get little cans of them cheap in the spice aisle of any grocery store.

Those two seasonings along with salt and pepper, garlic and lemon and you've got a meal fit for a king.

For trout, the fish I primarily go for, I probably smoke the majority of them; soak 'em in a brine solution with a bit of brown sugar added overnight, alderwood chips only, never had any complaints. However, the shore lunch recipe is relatively simple-take the trout & stuff the cavity with chopped sweet red onions, mushrooms, and 2-4 rolled up strips of bacon, wrap tightly in foil, and put them on the grill or over the firepit. Doesn't take long, best fish I've ever eaten.

For 'eyes/perch/'pout, I've tried a few different ways and coating mixes, but for me, I still find the original Shore Lunch the easiest to find and the the tastiest, pan fry 'em in bacon drippings for shore lunch, use their Beer Batter recipe when at home.

Made my mouth water just reading the recipe. It just so happens I have a few fish in the freezer. ;\) I'm going to have to give this a try.

Sometimes I like to marinade a batch overnight in some Pace Hot Pecante Sauce. Then I shake off as much as I can, you want them a little wet yet, and drop them in Luzziane Cajun Chicken batter mix. Right into the deep fryer. Not as hot as you might think, but quite flavorful.
