I need to make the time... we may be shutting down early this year. Then we can make a pheasant dish up for football! I got a couple that are quite tasty! One of my favorites is "forbidden thighs"... Bring the fire extinguisher i.e. Homer Simpson's favorite beverageFive-Alarm Three-Bean Chili(Courtesy of Sandra Lee Semi-Homemade Slow Cooker Recipes)2 pounds beef stew meat, cut into small pieces 2 cans (14.5 ounces) diced tomatoes with green chiles 1 can (15 ounces) pinto beans, rinsed and drained 1 can (15 ounces) cannellini beans, rinsed and drained 1 can (15 ounces) kidney beans, rinsed and drained 1 bottle (12 ounces) ale-style beer 1 medium onion, diced 1 can (6 ounces) tomato paste 2 packets hot chili seasoning 2 jalapeno chile peppers, diced red pepper flakes sliced jalapeno peppers (optional)In a 5-quart slow cooker, stir together beef, tomatoes, pinto beans, cannellini beans, kidney beans, beer, onion, tomato paste, seasoning mix, diced jalapenos, and 2 teaspoons red pepper flakes until thoroughly combined. Cover and cook on high for 4 to 5 hours. Spoon into soup bowls. Top with sliced jalapenos. I use Cayenne pepper instead of the pepper flakes also. If you need to cool it off get some sour cream and mix it in. I like it with brown rice and I also use 2 lbs ground turkey instead of stew meat. I brown it in Light olive Oil and the onion first and add it with the rest of the ingredients. I also use pickled jalapenos instead of fresh and a lot more than the recipe calls out.Cheffrey help me out what cut of meat could I substitue instead of stew meat and cube it myself? Certainly round will work, ground beef, brisket, flank, etc... You would be suprised what cuts you can't use for chili. I have made it out of just about every cut from every animal. I have $1,700 in wild game arriving tomorrow from alligator to rattlesnake, venison, elk, antelope, and the list goes on. South Shore brewery will be headed over as well.
