Woodcock?

Wondering if anybody has seen any woodcock moving yet? Should be showing up here in SE MN in the next week or so, particularly with this latest cold snap and snow up north.

Uplander has saw them up close and personal. We must have flushed about 15 of them in 30 minutes on Sunday.

This should be the week with the cold snap and wind out of the North-North West they should be coming through thick. Anyone have an favorite woodcock recipes that they don't need to keep a secret? I pheasant hunt out by the border on SD and there's a cottonwood forest that usually has a bunch the first week of pheasant hunting. I always make sure to bring a few 7 1/2 loads for the spot...

I usually will pan fry them, or bake them in certain wild rice soups or gravy as I do with grouse. Just thinking about trying something new this year. Much darker that grouse meat...but still tasty!

Woodcock migration is in full swing. Up here in Bemidji the Northern birds are really moving in, later than usual, but good numbers. Our locals should be on your doorstep!

As for a recipe, cut the meat off the breast and wrap it in bacon and sprinkle with onion flakes, throw it on kebobs and toss 'em on the grill. They're delish!

Try Woodcock Rumaki

cut the breats in two.

Salt and pepper.

Wrap a strip of bacon around each piece with a couple sliced water chestnuts.

Spear with a toothpick.

Arrange in shallow baking dish.

Sprinkle with brown sugar.

Douse with a liberal amount of soy sauce.

Broil for 2-3 minutes until tops are turning brown.

Finish off by baking uncovered at 350 for 15 minutes.

You can also try smoking them. Yum!
