We are cooking a whole hog over where we fished off my buddy's dock last fall. We are starting it sometime late, late Sat. night and will be feasting on it Sun. till it's gone! Stop in if your around! Week ago today another friend's young son C&R'd a 30" piggy! Gonna get a replica made! Teach'm young and everyone will benefit! For beef and pork, Cookies and FD's Sassy.One hint for those who really love BBQ'd food, try using one of the dry rubs that are out. You can put this on before you cook without worry of burning, it gets the flavor deeper into the meat, and then near the end slap on your favorite sauce. MMMMMMMMM! Although I find none of the bottled sauces are quite spicy enough for me, I like a thick, bold and tangy flavor, that is why I usually make my own.Kitchen sink BBQ sauce...1 cup ketchup2 TBSP minced garlic1 TBSP black pepper1-3 TBSP hot sauce (like tobasco)1/2 cup brown sugar1-2 TBSP molasses1/2 TSP cayanne pepper1-3 TBSP lemon juice or vinegar (add slowly and stop when sauce reaches desired thickness.This is just a basic recipe, I make it a little different each time I make it. sometimes add chopped jalapeno or habenero for a really firey sauce. Sweet onions are good, yellow or dijon mustard, soy sauce and/or chili paste, etc. A shot or two of your favorite bourbon will add a nice touch too. Thename is SVEN'S BBQ sauce. Very thick andman is it good!!! I also second the callof using the dry rubs and then coatingwith BBQ sauce. Farley Posted August 11, 2003 Share Posted August 11, 2003 The best sauce I tasted was on a street corner in Toledo Ohio about 4 or 5 years ago after the big blues/rib-fest. We were walking back to our hotel (something I wouldn't advise doing in Toledo(rough neiborhood)) and there was this huge beast of a man who called himself "Fat Man". We were stuffed from all the ribs we ate that day but he insisted we try his sauce so he gave us each a big piece of BBQ chicken with his "Fat Man's BBQ sauce" and it was by far the best sauce of the day. We bought one bottle but now I wish we would've stocked up or got his business card or something. Oh well, you know what they say, you can wish in one hand and s#!t in the other....... It DOES need some sugar, for the table I add some white or brown, mix in and serve... for the grill I add JUST A PINCH, just enough to get some good carmelazation, but not enough to burn like some high sugar commercial sauces...Man this is good stuff, its what true BBQ was meant to be....Hey if anyone want to get to gether for some smokin, Ive got a big smoker that will do 3-4 racks ribs, 2 chickens, and some other meats at same time... let me know and we will ahve a smoking / football party !!!Wally[email protected] Link to comment Share on other sites More sharing options...
