Slice up pieces of green bell pepper. 4. take pepperjack cheese and lay it on top of the peppers on the duck5. roll the breast up with the peppers and cheese and wrap pieces of bacon over the duck so none of the peppers or cheese fall out.6. Traxxx Posted April 29, 2005 Share Posted April 29, 2005 Heres one I made up the other day. 1) cut duck breasts into 1/3rds 2) marinade in your favorite BBQ sauce over night 3) wrap in 1/3 to 1/2 slice of smoked bacon-secure w/toothpick 4)grill for 10-12 minutes and enjoy! EYEHUNTER10 Posted April 29, 2005 Share Posted April 29, 2005 Pheasent is better I can't stand duck even when its slowcooked even then I wouldn't even want to try it, I make my goose in too jerky its pretty good, and the pheasent goes into the crock pot with cream of mushroom and cream of chicken onions potatoes etc . . Little Joe Posted April 29, 2005 Share Posted April 29, 2005 Here's how I make mine:1) Marinade breasts in Garlic Teriyaki overnight2) cut into chunks3) Rap chunks, jalepeno (small pieces), and sliced banana peppers with bacon.4) throw a toothpick in to keep it all together and throw on the grill. I've done the same with goose breast and it's great with that too.ps - remember to soak your toothpicks in some water for a couple of hours prior to grilling (or else they will burn up on you). Teal breasts are perfect, but I've used woodies and mallards as well. 1. Marinade the duck in apple juice (cider is a bit strong and actually "cooks" the duck ) overnight. Split a mallard half breast piece in at least two or three pieces.2. wrap with bacon and secure with toothpick3. grill___________________I've also had this same thing but soaked overnight in cold coffe and although there was a slight coffee tang it was pretty much just as good. I'm not a coffee drinker which explains the switch to apple juice. Father-in-law swears it is the best duck he has ever had--just like eating good tenderloin.
