Grainbelt Posted December 19, 2015 Share Posted December 19, 2015 I got my sharpener at Harbor Freight for $50. 1" by 30" belt sander. I practiced on cheapo steak knives till I got it down. Trick with those is that you should use the same amount of strokes with each grade. Then use a steel to finish off your cycle. What you don't want to do is use them too often. They will in time wear down your blade. I use a stone at this time and my two steels. I have a "course" steel and a smooth steel. Often times they are just what I need. leechlake Posted December 19, 2015 Author Share Posted December 19, 2015 (edited) I didn't even know what you guys were referring to with the Chef's Choice Gizmo but seeing the picture I have one. Mine is a two stager though. Left side sharpens right side hones. Frankly, I don't like it that much. I think it's hard to keep the angle right since the stone spins and kind of floats or pivots. I will use it on steak knives when they've got abused but it sits in a cabinet above our fridge. Also, I don't like dump sitting around on the counter and I'm old school with the stone and steel thing that sits in the knife block. I'm in the minority I'm sure. Using that would be like using some Rice Maker instead of just using a normal pan. For the amateurs I understand it's benefit Boar- you can have mine and for Christmas get 5000 feet of extension cord it you ever need to sharpen a knife out in the woods. (I'm in a bad mood this morning so forgive me) PS- this edit is because as I typed this RH, at least in part, stated what I was trying to write and my thoughts. That is an early Christmas present for sure, RH and I on the same page!!! Thanks RH, I'm in a better mood now. delcecchi Posted December 19, 2015 Share Posted December 19, 2015 ok then for a guy who cant sharpen knives worth a squat, what a good sharpener that dont cost a 100 bucks or more,cheapest, and very effectve, piece of glass or old mirrir, or a mirror tile.
