Last time I did this I tried the tin can and briquettes. The amazen smoker tube has been going for about 30 min and the temp has barely moved on the Guage. So far so good, picked up some gouda, jarlsberg, red pepper, asiago and somehow a brick of Indian cottage cheese landed in my cart...which tasted kind of bland so hopefully lots of smoke will help.. I spend 4 hours at the range slaving over smoking hot pistol barrels, dents in my cheeks from casing fly bys, and now I have to deal with bricks of smoked cheese and eggs and...and......... Really didn't care for it, was like eating a brick of solid smoke. Too much for me. Ranked it right up there with the horseradish cheese. Too old fashioned and stick to the cooking school theory that "all things should enhance and compliment, never overpower a dish". Probably best me trying it myself with a nice soft cheese, like Havarti for a short period of time. You guys are making me eat more, ya know, and I'm trying to get under that 235 lb mark.... Sliced off some cheddar, which seemed a smidge strong yet but really went well with chili. The slivers off gouda, jarlsberg, and pepper cheese were really good, the Indian c cheese that I grabbed was yet super blah, but I'll find a use for it.
