I'll have to try jarlsburg one of these days. Is it kind of like gouda as far as taste and texture??

Real close, gouda is our fav but jarlsburg comes in a close 2nd. The Mrs wants to bring for an Easter treat tomorrow but I believe the cheese gets better the longer it sits.

What kind of heat you runnin in the smoker eyeguy?  With cold smoking mine get a little color, but after 2 1/2 hours I yanked em..

He might have changed it up, but last I knew he was doing them for about 45 minutes at 145 or so.

30 to 45 minutes 145 to 150 works dandy. Start with everything cold. turn it on and close the vent hole. apple wood has become my favorite but anything works so try many batches to find your favorite.

Well, I've done it now. I just ate my Easter dinner. I had RH's chili brats and some spring salad, beans, and relishes ready to go. Kept looking at it...the weber was just sitting there...it was starting to sprinkle, but it's 50*deg out.... That did it. The brats went on and the other stuff was set out. Now it's gone, and it was  great. Thanks, RH. Love those chili brats.  Looks like tomorrow is gonna be a whatever I can find day.I'll dig up something.  I'll be keeping busy doing stuff anyway, I like to do that on holidays. Keeps my mind from wandering where I don't want it to go. So, I think I'm gonna sign off for now, and I want to wish every one of you a Happy Easter, a great day, and hope ya have plenty of goodies to go around.
