Substituting Splenda for sugar in Pike pickling reciepe ?

I made a batch of pickled pike that turned out great.

24 hours in salt water brine

24 hours in white vinegar

boil 3 1/2 cups sugar in 3 1/2 cups of vinegar cool

pour over layered onions and pike with table spoon of pickling spices wait 10 days enjoy.

I really like the flavor but I am also diabetic has anyone ever substituted splenda or truvia for the sugar? In vinegar pickling the sugar is for flavor not preservation so I assume it should work just wondering if anyone has tried it?

I am also a diabetic, but using splenda is bad, its not natural. Use stevia, it is natural and not harmful for diabetics. I also use honey alot in recipies.

Honey is a carbohydrate. Splenda, stevia, saccharine, aspartame, makes no difference.

I am a diabetic as well, a carb is a carb is a carb - no matter if it is refined sugar or sugar from fruits, veggies, whole grains etc. You need to monitor the amount of carbs you take in no matter what kind it is. The amount of sugar you would get from pickled pike would not be that much to change your recipe.

If you havent taken a diabetics class I highly recommend it, it is covered under most insurance plans. Breaks all this info down and gives you a lot of tips on controlling your blood sugars.

Also stay away from ANYTHING w aspartame, it completely messes with your insulin, pancreas and if your a type 1 diabetic it can cause issues with the absorption of insulin which will cause high blood sugars. Ie diet pop, there are very few choices out there that do not contain aspartame- Soda stream (the pop you make yourself) does not contain aspartame and has a lot of choices.

I know way more about diabetes than I ever wanted to, went from type 2 to a type 1 in a little over a year, lost 40 # in about a month due to pancreas issues, MRI's, cat scans, thought I had a pituitary gland tumor, more blood tests than I can count and now see a endocrinologist very 6 months. Found out lots of things we consumed can really mess with your blood sugars and many of those are from processed foods- make sure to read labels and always remember a carb is a carb not matter what it is.

You, and me both, NEANGLER. I've been a type 1 for 45 years. I've seen it all, and pretty much done it all. I quit using all the sugar substitutes, and went back to using plain sugar. I do count carbs, and monitor how much sugar is used in cooking, and eating. Aspartame/Nutrasweet is one to really stay away from, not only for the reasons already posted, but also there are side effects regarding memory issues, and headaches, in some people who regularly consume certain levels of aspartame. I used to work for a pharmaceutical manufacturer making vitamins, and lets just say that unprocessed aspartame is an 'interesting' kind of powder to use. Use what you want to for a pickling recipe, but if it was me, I'd use straight sugar, and just moderate consumption.

Do you have a reference that confirms what you say about aspartame? Sounds like the stuff that is floating around the net, so I would like to know if it is confirmed by a reputable source.

I can dig some stuff up for you since I did a ton of research on it but when the doctors tell you to stay away from it too I take there word for it. I have a niece who has horrible reactions to it and we have a family friend who was diagnosed with aspartame poisoning and now is on heart mess for the rest of her life. If you are comfortable consuming something that was discovered by a fertilizer company (Monsanto) by accident then go right ahead. It's better to go in moderation w natural sugars than using artificial products. Just trying to help out.
