Camping grub!

Looking to see what everyone's favorite camping food is.. I am looking for a change from the same old stuff... Burgers, brats, foil dinners pasta salads, baked potatoes etc etc... lets hear from ya!!

Gotta love omelet in a bag for around the fire.

Original recipe makes 1 omelet

2 eggs

2 slices ham, chopped (optional)

1/2 cup shredded Cheddar cheese

1 tablespoon chopped onion (optional)

1 tablespoon chopped green bell pepper (optional)

2 tablespoons chopped fresh tomato (optional)

1 tablespoon chunky salsa (optional)

2 fresh mushrooms, sliced (optional)

Check All Add to Shopping List

Directions

Crack the eggs into a large resealable freezer bag. Press out most of the air, and seal. Shake or squeeze to beat the eggs. Open the bag, and add the ham, cheese, onion, green pepper, tomato, salsa, and mushrooms. Squeeze out as much of the air as you can, and seal the bag.

Bring a large pot of water to a boil. Place up to 8 bags at a time into the boiling water. Cook for exactly 13 minutes. Open the bag, and let the omelet roll out onto a plate. The omelet should roll out easily.

My go to camping breakfast is SPAM and egg burrito's..... Cut the spam in to 1/2" cube/ sticks bring some el paso medium taco sauce, and it will keep you going allll day long. O used to use salsa, but it gets tooo messy, my son turned me on to the taco sauce, and it is absolutley perfect.....

I don't like normal omelets but there's something about an omeleet in a bag out in the woods. Of course when I make mine its about 90 percent meat and peppers and 10 percent eggs.

Campfire Pizza:

Take a package of round pitas. Toss a couple in a dutch oven until that side is browned and getting a bit crispy. Remove. On the side that was cooked, add pizza sauce and your favorite toppings. Add them back to the heat (this time the non-cooked side will be on the heat). Put the top on the oven and wait till the cheese is melted and the underside is crispy. Remove, cut into slices and enjoy. Mmm....

Minncorr, the DOC industry program used to produce these things at one of the prisons and supply other government agencies. They were also for sale to the public and I picked one up back in the 90's when I was still working in the prison system. Mine is now over 20 years old and still in great shape.
