SkunkedAgain
I picked up a NY strip last night and smoked it. Unfortunately the strong winds blew out my propane flame twice so I had to turn up the temp. Still, it cooked for about 30 minutes at 300 degrees and hit an internal temp of 140, a little past my preferred doneness. However, it had a great smoky taste and was well cooked. I'll have to do this again on a less windy day and also maybe finish it on the grill.
hockeybc69
You need to get yourself a woodfire grill. http://hearthlandproducts.com/products/grills Not cheap, but man, am I HAPPY with the things! Everything gets a nice smokey flavor. Its a grill/convection/smoker all in one.
dirtking
At deer camp we build an oak fire in the weber. After the flames have died down and we have some nice coals on go the steaks. Smokey and awesome. We have also been known to shovel some oak coals out of the fireplace into the weber and then add a stick or two of unburnt wood. Not quite smoking a steak, but it cooks them and adds a nice smoky flavor
eyeguy 54
I have put a few steaks in the smoker with mesquite on a low temp for 15 to 20 mintes and then put them on the grill. Pretty tastey.
reinhard1
i add some chips to the charcoal while cooking the steaks. put the steaks in indirect heat for awhile with the lid closed in the beginning of the proccess. good luck.
Mid-Lake Rock
I've done a normal charcoal fire then put apple or hickory chip that have been soaked on the coals and grill the steak. Works well. Speaking of smoked steak...another favorite is to get a big prime rib and use rub, seasoning or whatever you like then smoke it on low heat for several hours. Don't let it cook through. Then slice the prime rib into steaks and grill them. I have a buddy with a BBQ business and that is the number one seller.
reinhard1
that's a great idea with the rib roast. makes a lot of sense. rib steaks are one of my favorite. i would like to try that with a whole chuck roll and then cut it into steaks and finish them off on the grill. good luck.
