Walleyehooker Posted May 5, 2012 Share Posted May 5, 2012 STRAWBERRY-RHUBARB PIE 9 inch pie crust 1 2/3 c. sugar 1/3 c. flour 2 c. chopped (ripe) rhubarb 2 c. fresh sliced strawberries 1 1/4 tsp. butter Mix sugar and flour. Mix lightly into strawberries and rhubarb. Pour mixture into pie shell and dot with butter. Cover pie crust with other 1/2 of shell. Cover the edges with 1 1/2 inch wide strips of aluminum foil. Walleyehooker Posted May 6, 2012 Author Share Posted May 6, 2012 I bought the rhubarb I used for this but I also have a rhubarb plant that I should get some from in a couple weeks or so. I usually pick it when it turns red and the stalks will be about 1/2 inch wide or so. I also just bought another plant to put in the ground as this is one of my favorite pies.
