I really love hashbrowns and lately have been making them in the oven instead of on the stove, it's really easy to do, little less greasy and no mess to clean up on the stove. I usually put it in the pan and then in the fridge the night before to thaw, then all I have to do is throw them in the oven as soon as I get up to make coffee in the morning. Also a great way to make a bunch for a group.

No real measurements, grease a glass baking pan, pour in a bag of frozen hash browns. Add chopped up onion, salt, pepper, and any other seasonings, top with pats of butter or melt and pour over. Bake in the oven uncovered for 30-40 minutes until brown and crispy on top.

One of my favorites is to take the potatoes and add peppers, onions, and ham or browned sausage. Top with cheese for the last few minutes, scoop onto a plate and top with a few over easy eggs.

I like to roast potatoes in the oven.

Take some waxier potatoes ie red ones

Quarter them or cut into 6ths depending on the size of them.

Toss with olive oil.

Sprinkle with kosher salt, pepper, and whatever spices you want. I have used rosemary, or parsley flakes, garlic powder, or whatever else you want

Roast in a 400 degree oven about 45 min or until slightly golden brown.

They come out crispy on the outside and soft on the inside.

Here is is different twist on french fries.

Oven baked french fries

3 large potatoes cut into french fry strips

2 egg whites

2 tablespoons parmaesan

1 teaspoon garlic powder

wash cut potatoes. Dry with paper towels. Combine egg whites, parmesan and garlic powder. Add potatoes, toss to coat. Place the fries on a jelly roll pan coated with cooking spray. Bake at 375 for 35-40 min. or until golden, turning several times and try to keep in one layer on the pan.

I diced about 3-4 lb into bout 1/2 x 1in chunks, put into a baking pan and coat lightly with olive oil:

then i sprinkle on some "Ras El Hanout" seasoning, its a morrocan spice i got turned onto in the army, but McCormiks carries it at Wally world!(if you can't find it just use cumin, cinnimon, ginger powder, curriander, and chili powder)

throw in the oven at 375 for bout 45 minutes until they start to brown up then pour over some "Tikka Masala sauce" and finish up for another 10 min.

for like 3 bucks these are some of the best potatoes you can get.

I like twice baked, garlic mashed, scalloped, campfire (or hobo style) and cubed and oven roasted... but a real twist is a potato pizza. You need to par boil slices until just tender. Then brush down a blind baked pizza crust with garlic butter and olive oil. Add the slices (salt and pepper them, brush with butter), some cheese, maybe some thin onion and bake until hot.

When you serve this bad boy, take some of your favorite baked potato toppings, chives, bacon, green onion, sour cream and add them right before cutting.

Yes....That looks great. I was watching an episode of Food Network's 'Your Favorite Food" and someone talked about potato pizza at some restaurant somewhere. I thought, Potato Pizza, whats up with that? Now I know.

well this is how my twice baked stuffed potatoes looked like before i put them in the oven the other day. sorry i dont have any after picture. just playing posting pictures now that i'm getting better at it. have to get a camera like third eye grin. i started out with 5 potatoes close to a pound each. good luck.

How about mashed potatoe pizza!

Start with a store bought boboli crust. Cover the crust with Simply Mashed Potatoes about 1" thick. I use the garlic mashed. I also warm them a bit in the micro, they spread easier. Next, dice up #1 bacon and render down till almost crisp. Remove bacon and most of the grease. Dice up a red pepper and one onion and cook both in fat till they start to soften. Place bacon, onion and pepper on top of mashed taters. Peel, seed and chop large tomato. Sprinkle the tomato with a little Italian dressing, or balsamic if prefered and put on top of pizza. Cover with cheddar and mozzarella. Bake at 350 for 30 - 40 min. Let cool for 10 min to allow to firm up before cutting. Serve with sour cream on the side. A little more italian on top is also good.

I took an attempt at this last night. The wife was very skeptical but we both were pleasantly surprised and it turned out great.

My only mistake was not par boiling the potatoes long enough. This will definitely be added to the meal rotation though.

Smoked!

Smoked potatoes

Cook time: 2-3 hours (depending on potato size)

What you will need:

•8 baking potatoes

•1 c bacon grease (softened) - I use olive oil cuz its readily available

•2 T granulated garlic

•2 T dried parsley

•2 T seasoned salt

•2 T coarsely ground black pepper

•2 T sugar

•2 T paprika

•2 T dried chives

•1 T onion powder

Preparation

1.Rinse the potatoes. Dry well with a paper towel. Poke through skin several times with a fork and set aside.

2.Wisp all dry ingredients together in a bowl. The chives will mostly rise to the top during wisping. When all dry ingredients are thoroughly mixed, mix for a few seconds with your hands to disperse the chives. Set aside.

3.The next steps are easiest is you do one potato at a time. Coat a potato generously with bacon grease. Spend about 15-20 seconds rubbing the grease in. You are trying to force the grease into the holes you made with the fork as well as rub it into the skin. Place the potato in the bowl with the dry ingredients and roll around, completely covering with the mix. Place the potato on a plate. Repeat until all potatoes are coated thoroughly. Let stand for 5-10 minutes.

4.Place the potatoes on your smoker when there is about 3 to 3.5 hours of cook time left. I recommend you use a potato rack and rotate the potatoes 180° after 1.5 hours. potatoes are done when toothpick slides easily into the potato. Keep in mind, the outer skin will be crispy and may be difficult to pierce. Once through the skin, the toothpick should slide easily into the potato.

Looks pretty good hockypuck!!! Will have to gather the ingredients and try it!!! I think it would also work on a regular grill with indirect heat.

I like potatoes but have made my wife tired of them, need to get off my duff and try a few of these recipes.
