DEEP FRY NIGHT! Need ideas...

about 2x a year (any more and we'd be dead) a couple buddies and i get together for a deep fried food & more than a few adult beverages night. i make my own batter and have to say its incredible. beer-based, with onion salt, spanish paprica, & a little cajun, seasoned to taste. so far we've done jalapeno cheddar brats wrapped in sliced xtra sharp cheddar wrapped in candied bacon (my fav), grilled chicken wrapped in pepper jack wrapped in candied bacon, little smokies wrapped in xtra sharp cheddar wrapped in candied bacon, cheese curds, pickles, peppers stuffed with cream cheese, s'mores & sour gummy worms (s'mores were incredible!), and venison burgers with blue cheese (not recommended, ick). all were deep fried and absolutely delicious! any other ideas?

look up the thread called "The Crazy Fry Guide" on page 6 of the cooking forum. has some ideas your looking for. but then if your looking for the un-crazy stuff for your buds or just you and yours here is one to hold on too.

KOREAN CHICKEN WINGS

2 to 3 pounds of chicken wings [tips removed]

1 cup of Wondra flour [dont use regular flour]

1 tsp salt

1 tsp pepper

Soy Ginger Glaze

1 cup water

1 cup thin sliced fresh ginger root

3 tbls soy sauce

1/2 cup brown sugar

1/4 cup vinegar

2 tbls honey or corn syrup

1 to 2 tbls roaster brand garlic chile sauce or red pepper flakes to taste.

if you go to any store and to their chinese section you will see small bottles of garlic chile sauce. any brand will do realy.

toasted sesame seeds [you can find these also in the store in glass containers]

wash wings and pat dry with paper towels. mix flour with salt and pepper and dredge wings in the flour mix to get a fine coating. heat oil to 350 deg. fry wings in the oil for 5 minutes in batches. remove wings and shake off any excess flour or grit. set wings on paper towels and allow to cool completly.

in the meantime in a saucepan add the water, ginger, soy sauce, vinegar, chile sauce, sugar, and bring to a boil. then add the honey, corn syrup and reduce by half while simmering. it will be a thick syrup like consistancy and set aside.

now take the cold wings and put them in the fryer again in batches for 6 to 8 minutes until golden brown. let drain and put them on paper towels. then dredge or brush the ginger sauce on the wings well and sprinkle with the toasted sesame seeds. i usualy put them on a cookie pan or a 9 by 12 baking dish when i baste them. i usualy make more wings than the recipe calls for and double on the ginger sauce as well. after basting and putting the sesame seeds on i usualy put them in the oven on low or keep warm setting in between serving. i serve them with rice and kimchi.

a realy quick way to cover the wings with the ginger sauce is to put the wings in a large bowl and pour the sauce on top of them and mix well, sprinkling sesame seeds as you are mixing. good luck.

This summer, we did jalapeno peppers stuffed with lil' smokies/cream cheese and wrapped with bacon. Those were good and good for you laugh

The deep fryer is probably one of the most versatile cooking devices out there. We also do this about twice a year. Like you said, any more than that would require a life flight laugh

I think deep frying gets a bad rap. It's not the healthiest cooking, but done correctly, your food should come out almost void of grease. It's all about having the oil at the right temp, if it's not hot enough, you'll get soggy breading that's full of grease, that's definitely not good for you (no to mention gross). I think the most unhealthy aspect is that the natural fats that get get cooked out with most other methods get trapped in with frying. But that's what makes it great. I'll definitely have to try your brats wrapped in cheese wrapped in Canadian bacon. that sounds AWESOME!

Nothing better than a deep fried dessert all you need is some cinammon and sugar and some pancake mix mix together and roll twinkiees in it then deep fry yes I said twinkies deep fry for a few seconds then serve with a bit of powdered suger sifted over them...YUMMMMMMMMMMMMMMMMMY

Another favorite is deep fried mac and cheese

make up a batch of mac and cheese but add more mobetter than usual then freeze take out of freezer cut into squares then dip into batter and deep fry...

thunderlund, no canadian bacon. we do candied bacon. i don't remember exactly how he does it but it's the best i've ever had. i know he uses thick bacon, glazed with maple syrup & brown sugar & bake in the oven for about 20mins. fried bacon doesn't work since its crispy & it doesn't wrap, plus candied bacon is waaaay better than regular fried bacon. oh man i'm hungry now...

ya, i knew the wing recipe would be a strech, and you would have to probably be sober to do it grin. it's a great recipe for when you have the time. check out that "crazy frying guide" on page 6 of the cooking forum. has most of that stuff mentioned above and more. just up your ally. good luck.

One that was always a favorite with my buddy's was homemade potato chips. I have a attachment for my Kitchen Aid mixer that pumps them out faster than I can cook them. Just salt them while there hot. I like mine a little over cooked and nice and crispy. Maybe some shrimp with your batter and add some panko crumbs.
