LightningBG
1. Deep fried turkey is awesome, and healthy (seriously)2. thaw your turkey fully3. place the turkey in the pot and fill with water, up to the level you want your oil after the turkey is in it.4. Take turkey out. Mark how high the water is in the pot.5. Dump out water, and fill with oil up to your mark.6. Heat oil7. Dry thawed turkey very well, with towels or paper towels.8. slowly lower turkey into oil.9. keep oil at steady temp throughout (I cant remember what temp it is)10. take out when internal temp reaches goal.11. enjoy12. make sure you dont burn down your garage. Jim Almquist
3 1/2 minutes a pound at 350 degrees but check it with a meat thermometer just to be sure. I like to pull mine at 165 and let it rest and finish cooking and it should then hit 170 degrees. Outside were you could careless if there was any grease splatters. Good pair of leather gloves and make sure the cloths you wear can handle a few grease drops. No matter how slow and careful it just seems like a few drops will land on something. The oil temp will drop when you put in the turkey but it will come back when the turkey get up to temp. ENJOY ! Best skin you will darn near ever eat

Kidd
8. slowly lower turkey into oil. This is most important tip you'll get as this is where the trouble happens. Be sure to lower the turkey very slowly or the grease will bubble over the top of the pot and onto the flame.
Walleye Guy
Best advice I would give you is to watch somebody else do it before you do it on your own.
LightningBG
I think the most important part is figuring out how much oil to put in. #3-5. Dont eye ball it or guess. If you have too much oil in that pot, it will spill over and ignite. FIREBALL. Also, I wouldn't do it on your driveway or deck, it will leave spots. (or you can always put down wood or cardboard.) FishLocker
The water experiment to find out the right amount of oil to use is right on.Lowering very slowly is also right on.Drying the turkey (3 or 4 times over) is right up at the top for importance too as most boil overs and flash fires are caused when the water on the bird hits the oil and instantly boils spattering oil all over and starting the flash fire. If there is a large amount of water you get a boil over where instead of spatters igniting, the pot boils over and it all goes up, including your garage :-(.Good advice was given already,,,watch someone else do it first and take notes (and stand waaaaay back)They taste very good this way!
