Dark Cloud Posted July 22, 2010 Share Posted July 22, 2010 I dont have an exact recipe but have been making this alot the past few weeks with fresh zuchinni and yellow squash from the garden... Dice up the squash and zuchinni and get it sauteing in a little olive oil, salt, and pepper. When they are just starting to soften I add half a bag of baby spinach, half a jar of salsa, and a big pile of cooked wild rice. Cook for a few minutes to combine and wilt the spinach. Add more salsa or veggie stock if it needs more moisture... Finish with some crumbled feta or grated parmesian cheese on top... McGurk Posted July 22, 2010 Share Posted July 22, 2010 I don't have a lot of wild rice experience, but I looked arund a bit and found some ideas (neither with bacon, but we can change that right up!) For a hot side dish, tweaked by me: Ingredients: 3 1/2 cups chicken broth 2 1/2 cups water 2 cups uncooked wild rice 1/2 teaspoon salt 1/2 teaspoon dried thyme 1/2 teaspoon pepper 1/4 teaspoon dried rosemary, crushed In a large saucepan, bring broth and water to a boil. add the rice, salt, thyme, pepper and rosemary. Reduce heat; cover and simmer for 60-65 minutes or until rice is tender; drain. 6-8 slices of bacon Fry in a large skillet, remove and cool bacon, leave grease in pan over low-medium heat, and add: 2 Tbsp butter 2 garlic cloves, minced allow garlic to brown slightly, and add: 1 pound fresh mushrooms, sliced 3/4 cup diced celery 1/2 cup sliced green onions Saute until softened, and lower the heat. Add the cooked rice (and 1/2 cup of crushed pecans or slivered almonds, optional); simmer until desired consistency is reached. Of course, top with crushed bacon. Another thought on this is to take a pound of fried pork sausage (I'd choose HOT!) remove and use some of the grease, and then add it back to the skillet with the rice. This could be done instead of the bacon, but you guys know me, just do both! Then there's always the cold wild rice salad: 1 (6 ounce) package wild rice 3/4 cup light mayonnaise 1 teaspoon white vinegar 1 teaspoon white sugar 2 cups cooked, cubed turkey meat 1/4 cup diced green onion 1/4 cup diced celery 1 cup seedless red grapes, halved salt and pepper to taste 6 ounces blanched slivered almonds Cook rice. Mix mayo, vinegar, and sugar in a large mixing/serving bowl. Add turkey, onion, celery, and grapes and mix until covered. Add rice, salt and pepper and mix again. Taste test for seasoning, and refrigerate for 2 hours. Top with almonds and serve cold. Crushed bacon on top wouldn't be bad here, either! reinhard1 Posted July 23, 2010 Author Share Posted July 23, 2010 made it yesterday dark cloud. the only difference was that i cut some celery and put it in the wild rice during the cooking process. i added a little over a pound of my pepper jack jalopeno venison sausage. it was thumbs up with my wife and mother-in law. thank you again. good luck. BobT Posted July 23, 2010 Share Posted July 23, 2010 I like wild rice just cooked to my desired tenerness and then served with butter, salt, and pepper to taste. Sometimes I'll add saute'd onion, garlic, mushrooms, celery, carrots or any other vegetable to your liking, or maybe a little ceyenne pepper. Not always necessary to cream things up with soups.
