Great recipe tedl, I've had one very similar with brown sugar instead of honey but pretty much the same.

My favorite way to make sweet potatoes, is very easy and pretty fast.

Do a french fry cut on potatoes (as many as you want)

Spread out onto baking sheet, drizzle with olive oil. Sprinkle with seasoning salt and black pepper and bake in the oven at about 350deg for roughly 10-15 minutes.

Th numbers in this recipe are very rough, I generally just wing it. Just keep checking on the fries and tasting them until they are soft throughout. After they have sat for a few minutes they get more krispy and IMO better.

I have one for a barbecue rubbed sweet potato and it actually came from the executive chef of Wildfire restaurants. It is probably too close to baked sweet potato for you though but I will post it anyways.

Barbecue Rubbed Sweet Potatoes

2 teaspoons paprika

2 teaspoons chili powder

2 teaspoons BBQ spice

1 teaspoon garlic powder

1 teaspoon ground cumin

1 teaspoon poultry spice

1 teaspoon salt

1 teaspoon dried oregano

1/2 teaspoon onion powder

4 medium sweet potatoes

4 tablespoons salted butter

4 tablespoons light brown sugar

Preheat the oven to 375 degrees F. Line a baking sheet with aluminum foil.

In a medium bowl, mix together the paprika, chili powder, BBQ spice, garlic powder, cumin, poultry spice, salt, oregano, and onion powder.

Wash each sweet potato thoroughly under cold running water. Carefully pierce each potato, 4 to 5 times, with the tip of a small knife or the tines of a fork. With the sweet potatoes still wet, dredge each potato into the spice rub and place on the prepared baking sheet.

Bake the sweet potatoes for about 1 hour 20 minutes, or until they are very tender when pierced with a fork. To serve, split each potato open, lengthwise, and dollop each with 1 tablespoon of butter and 1 tablespoon of brown sugar.

I was referring to plain old baked in oven w/o any added ingredients. I will happily try all the recipes given here. I have hit some weird sweet potato craving lately.

Here is one I found but have not tried. It sure sounds good.

Soul Sweet Taters

4 medium sweet potatoes

1c sugar

1c milk

2 eggs

1 tsp vanilla

1 tsp salt

1c brown sugar

1c chopped pecans

1/2c flour

3/4 stick butter

Cook potatoes in 375 deg oven until fork tender, about 30-35 minutes.

Combine peeled, cooked potatoes with sugar, milk, eggs vanilla and salt. Mash with potato masher until combined.

In separate bowl, add brown sugar, pecans, flour and butter. With pastry cutter or fork, mash until combined.

Spread sweet potato in baking dish. Sprinkle crumb mixture over top. Bake at 400 deg for 40 minutes.

My wife makes a great sweet potato / white potato combo.

She just cubes them both and seasons them with a mixture of dry Ranch dressing and onion soup mix and 1/4 cups olive oil.

Put the potato combo in a large zip lok, then the oil then the dry mixes to coat the cubes. Bake in oven or on the grill in tin foil. My new favorite potato dish.

    • If you really want to treat your wife (and yourself) with a remote operated trolling motor, the Minn Kota Ulterra is about easy as it gets.  Auto stow and deploy is pretty awesome.  You just have to turn the motor on when you go out and that the last time you have to touch it.   24V 80lb.  60 inch shaft is probably the right length for your boat.  They ain’t cheap - about $3k - but neither one of you would have to leave your seat to use it all day.
    • Wanderer, thanks for your reply. I do intend for it to be 24 volt, with a thrust of 70-80. Spot lock is a must (my wife is looking forward to not being the anchor person any more).  With my old boat we did quite a lot of pulling shad raps and hot n tots, using the trolling motor. Unlikely that we will fish in whitecaps, did plenty of that when I was younger. I also need a wireless remote, not going back to a foot pedal. We do a fair amount of bobber fishing. I don't think I will bother with a depth finder on the trolling motor. I am leaning toward moving my Garmin depth finder from my old boat to the new one, just because I am so used to it and it works well for me. I am 70 years old and kinda set in my ways...
    • Dang, new content and now answers.   First, congrats on the new boat!   My recommendation is to get the most thrust you can in 24V, assuming a boat that size isn’t running 36V.  80 might be tops?  I’m partial to MinnKota.     How do you plan to use the trolling motor is an important question too.     All weather or just nice weather?   Casting a lot or bait dragging?   Bobber or panfish fishing?   Spot lock?  Networked with depth finders?  What brand of depth finders?
