I'm not a big fan of goose and duck but eat what I shoot and love everything about duck hunting, except the eating part. So give me your best recipe so that the wife and kids enjoy it too. Eric Wettschreck Posted November 6, 2007 Share Posted November 6, 2007 Goose Kaboobs;Take the meat and cut into cubes about 1 inch by 1 inch.Soak those bad boys in Itallian salad dressing for 2 days.Wrap them in bacon, stick with a toothpick, and grill on the Weber until the bacon is done. K9Art Posted November 6, 2007 Share Posted November 6, 2007 2 things i have done have been 1 cut into cubes like mentioned above then put a sliced water chestnut on each side, wrap in bacon, mari. in teri. sauce over night then grill. BobT Posted November 6, 2007 Share Posted November 6, 2007 My daughter and her friend claimed not to like goose but this recipe they returned for seconds.Filet the breasts off the bone.Mix up enough beef broth to cover or nearly cover the breasts. Add mushrooms, carrots, large sliced/chopped onion, celery, salt, and pepper. Basically you're making an onion soup. Might even be able to add a little swiss cheese just before serving? Haven't tried that but I might next time. Simmer in a crock pot for few hours.Very good.I threw this together as I went one time and so I didn't right down the amounts. SledNeck Posted November 12, 2007 Share Posted November 12, 2007 I cut into cubes then butterfly, put in large zip lock with cup of Lawry's Steak and Chop marinade & salt. Punch the living dump out of the bag (while its on the counter) to tenderize the meat before putting in the fridge for a couple of hours. Cut a sliver of fresh Jalapeno and put it in the middle of the meat and wrap one piece of the Oscar Mayer thin bacon around the meat...fasten with a toothpic. Grill to MEDIUM RARE. If you cook it any more than that throw it in the garbage cause its ruined. NEVER overcook waterfowl, thats the reason most people dont like it, cause they over cook it. I serve my duck and most of my game rare to medium rare unless otherwise noted, in the rare case I recieve a complaint on texture of meat it is typically those that order it medium well and up.
