I have the American Angler electric fillet knife. All I can say is why didnt I get an electric fillet knife sooner. It made filleting my fish fun and not a chore. It might not cut as close to the skin as a quality hand fillet knife, but it sure does cut quickier. 10 to 1 quicker.

I'd give another vote for the american angler, you might miss a little meat, but the speed more than makes up for it. The battery seems to hold a good charge, and the blades cut through bone like its not even there

Seeing these knives in stores is funny - we have a 40 year old "electric carving knife", and you know, it is the *exact* same thing as these newer electric fillet knives. I can't believe there isn't anyone else that has one of these old things in their kitchen, but everyone I ask gives me a blank stare...
