A related question, if you don't mind. What kind of pork do you use to grind up with your meat when you make burger? I'm grinding some goose burger this weekend and the recipe calls for 50% pork. What do you look for (other than price) when you're buying pork for grinding?

When we grind venison we look for Pork picnic trimmings, usually end up buying a 40# box ( maybe it was 60# can't remember for sure ), you should be able to get it at your supermarket or butcher shop and you will probably have to ask for it, I don't remember seeing it out front.

As for the grinder, I didn't have a 1 hp but do have a 1/2 hp and it is slow too. We ended up rigging a 1/2" drill to one of the bigger hand grinders and that thing can grind.

One more question. I have a Cabelas hand grinder and it came with two plates: 3/16" and 3/8" holes. The manual that comes with it didn't give any advice as to when to use which.

Which size hole (bigger or smaller) do you think would be the best for hamburger? I assume the larger?
