I have a knife sharpener, in fact this is my second Chefs Choice. Bought through Cabelas. I like it...some of my friends say they do not...dont know why?They do an excellent job sharpening knives with "minimum blade loss" Some of those hand held ones "peel" a lot of the blade away. You can actually see the trimmings.Chefs choice for me. I bought a molded plastic box with locking handle (about the size of the old ammunition metal boxes)And the sharpender sits in the lower section perfectly. BLACKJACK Posted January 28, 2004 Share Posted January 28, 2004 I would heartily recommend the Chefs Choice, I got one for Christmas. Sharpened all my kitchen knives and fillet knives in less than 1/2 hour. How long would it take you to do 10 knives with a hand sharpener? Get the one with three stages, one stage is for dull knives, the second stage is the medium sharpener, the third is for fine tuning, once your knives are are sharp, you only need to run it thru stages two and three. BIG Posted January 31, 2004 Author Share Posted January 31, 2004 I love you guys..........let me restate this question.......I am looking for an electric knife sharpener........I did pick-up a cheaper Chef's Choice at Target ($35), 2-stage......it works OK on filet knives but it really doesn't work at all on Chicago Cutlery knives, it doesn't sharpen pocket knives or serrated blades...I'm taking it back...12 below this morning... They were really dull, so that first stage/the most aggresive stage, really helped, then I ran it thru the other two stages. From now on, I shouldn't have to use that first stage. Spend the money on a good one, the way I figure it, $120 divided by 30 years is $4 a year. It took about 20 minutes to do 10 knives. Or you can spend 2-3 hours trying to sharpen them by hand. NOT. Phred52 Posted February 8, 2004 Share Posted February 8, 2004 Big, You might want to consider a steel for periodic maintinence, we got one with our Chicago cutlery set and it makes a world of difference. We won't be without one again. Try lightly (key word) dragging the blade over your thumbnail before and then after you do any amount of cutting. I'll guarantee you'll feel a difference. If it's sharp at the start, the blade will drag hard. After some cutting, it'll slide across. Try it Link to comment Share on other sites More sharing options...
BIG Posted February 15, 2004 Author Share Posted February 15, 2004 Thanks for the help guys.....by the way, the $1 butcher thing was only worth .50, I may end up with the Chef's Choice afterall....the butcher did give a tip however.
