Popular Post perchking Posted December 16, 2015 Popular Post Share Posted December 16, 2015 My first run of 25lbs turned out great, did 80/20 mix with PS seasoning made in Iron Ridge Wis and added extra sharp cheddar and stuffed them in 19MM collagen casings. Ran the smoker at 120 for an hour to dry them out a bit, then added pecan/apple smoke at 160 for the next 4-5hrs. They have a great snap, not dry at all, and a fantastic taste. My smoker is a re-purposed Proffer, shown is beef jerky I made last weekend also. For the smoke I bought the A-Mase-N 12inch smoker tube that runs smoke for about 4hrs when filled with pellets.
