It will be interesting to see what else people have to throw out there. pushbutton Posted November 11, 2015 Share Posted November 11, 2015 The best vennie breakfast sausage I ever had was a combo of central minnie cornfed Bambie, Pep's pork out of Spring Hill, and Penzyes Spice basic breakfast mix. Would recommend that the main ingredients in your mix should at least be salt, sugar, pepper....black for sure, maybe/probably paprika as well...some sort of nutmeg or clove.....sage and thyme .....as well as a little cayenne.....pretty much in that order. reinhard1 Posted November 11, 2015 Share Posted November 11, 2015 Best I've tried is Curley's Southern style breakfast sausage. Doesn't need tweeking but I still add garlic to all my sausage. Best to use straight pork butt. No pork fat is needed. I will be making this soon. I also put this in one pound bulk bags. good luck.
