Hey LBBG, Great meeting you! Please give an honest opinion on the sausage,. Thanks so much for your sample pack of C-Bacon and bacon, I sampled the C-Bacon and that stuf is delcious!! HAHA tothe rest of you guys... mY WIFE USED ALL THE EGGS for xmas cookies today so I cant even have bacon and eggs in the morn. But i will thurdsaday, HAHA tot the rest of you guys. Thanks again and i am cetainley doing C-Bacon.

I haven't cold smoked one yet but it sure would not hurt one bit.  You could get the color you want and then kick up the temp and even keep adding smoke to it in the process.  If you do that, use a milder wood like cherry or apple for example.  Stay away from mesquite or hickory for longer smokes on ham.  good luck.
