Electric Smoker Q's

I have an electric smoker and was wondering if anyone ever tried to put a dimmer switch or something on it to try and control the heat a little better? Mine is just plug in and one temp. Was thinking of smoking a wild turkey and I'm just not sure that I can control it well enough not to burn the craap out of the out side before it is done?

hmmmm. plug in, one temp. big or little chief model? i think the temp in them is round 170. had a couple. I think the manual said to smoke it for a couple hours, then finish in the oven.

Those smokers have a 1500 watt element so you will need at least a 1500 watt dimmer or it wont last long, most lighting load dimmers are either 600 or 1000 watt.

I use a ac voltage rheostat, same as used for a woodworking router. Approx $20-25 to provide good control/adjustment.

Thanks for the ideas guys. Will be trying the Turkey smoke in a week or so.
