Bureaucrat Posted August 20, 2014 Share Posted August 20, 2014 Took a shot at canning some chicken tonight. I had planned on 6-7 quarts for what I had chicken. I ended up with a little over 2 1/2. I was amazed at how many skinless breasts fit into a quart jar. I fit almost 5 averaged sized breasts into one jar (not frankenstein breasts from the store). Pretty simple formula. Pack raw chicken, chunk of onion, and some salt into a jar. Pressure can for 90 minutes at 15lbs. I'll give it a week and see what it tastes like. I also did some chicken soup. That didn't look too photogenic due to the dumpling experiment not going as planned. Nonetheless, I did chicken soup base, water, chicken, carrot, onion, and celery, salt to taste. It's easy to understand why canning is so popular. I've had 20 of the 1-1/2 pint jars for 25 years that I use for pork, corned beef & chicken.
