I de-boned the hind quarters and made two rump roasts out of each and then cut the loin from the back. Anybody have a particularly good way to cook some up? jentz Posted February 26, 2014 Share Posted February 26, 2014 I'd start a sample piece cooked like any pork you buy,Then decide.Sometimes larger hogs have strong flavor we're not used to since we normally have corporate raised hogs.You may find you dont want to hide the flavor of a real pig, and pan frying or oven roasting may be best for the true flavor thats been lost in the corporate pig! Brought most of it home, and I smoked some of it up just like doing a pork butt and it turned out really good.
