Yesterday and today I made 100 wild rice brats, 50 lbs of south west snack sticks and 65 hot dogs. For those who used to use Hamms butcher supply for your spices, I found a great replacement in Wisconsin since Hamms closed. PS Seasons. For my wild rice brats I just take any old brat seasoning and add 1 16oz package of wild rice for 25 lbs of meat. Before you add the rice you need to get it to open. To do that, you pour boiling water over the rice 3 separate times draining each time after it cools a bit. Then mix it into the meat. Good Eatin!
