First Brisket - change of plans

A transmission rebuild on the truck changed our plans for going up north, so I hit Lunds looking for a brisket. They had a couple of flat cuts on clearance because they were old - 4lbs for $20 instead of the usual $32 full price. I got the smoker going around 9pm last night with some good smoke with a plan to go 225 all night. Around 11pm the storm blew in. It knocked my windbreak down and threatened to knock over the smoker! I quickly pulled out the brisket and threw my smoker in the garage. The brisket when into the crock pot and was at an IT of 208 at 5:45am. I'm keeping it on the "warm" setting until just before lunch! I guess you have to adjust some times!

way to go!!ya, that storm knocked out our power for 2 hours but then there's candles. i went to the super walmart in Fridley the other day to get some whole slabs of beef back ribs [2.18 lb.] and i noticed they had a whole brisket [i'm guessing around 12 pounds] for 2.59 lb. for future reference. had it in a vacume sealed bag. looked real good and i think i'll get one next time down there. good luck.

Yeah, this was Lunds of all places...not my usual place to shop but it was Choice. I didn't hit the store until 8pm and knew that my local butchers were already closed for the night, so it was either Lunds or whatever I could scrounge at a Rainbow/Cub.

I bought a nice length of 1x10 pine yesterday. Now I can fashion together a real windbreak that will sit around the exterior of my smoker. It should solve most of my problems!

    • Chicken mine,  melded in Mccormick poultry seasoning for 24 hours.  Grill will get a break till the frigid temps go away!
    • we had some nice weather yesterday and this conundrum was driving me crazy  so I drove up to the house to take another look. I got a bunch of goodies via ups yesterday (cables,  winch ratchet parts, handles, leaf springs etc).   I wanted to make sure the new leaf springs I got fit. I got everything laid out and ready to go. Will be busy this weekend with kids stuff and too cold to fish anyway, but I will try to get back up there again next weekend and get it done. I don't think it will be bad once I get it lifted up.    For anyone in the google verse, the leaf springs are 4 leafs and measure 25 1/4" eye  to eye per Yetti. I didnt want to pay their markup so just got something else comparable rated for the same weight.   I am a first time wheel house owner, this is all new to me. My house didn't come with any handles for the rear cables? I was told this week by someone in the industry that cordless drills do not have enough brake to lower it slow enough and it can damage the cables and the ratchets in the winches.  I put on a handle last night and it is 100% better than using a drill, unfortatenly I found out the hard way lol and will only use the ICNutz to raise the house now.
    • I haven’t done any leaf springs for a long time and I can’t completely see the connections in your pics BUT I I’d be rounding up: PB Blaster, torch, 3 lb hammer, chisel, cut off tool, breaker bar, Jack stands or blocks.   This kind of stuff usually isn’t the easiest.   I would think you would be able to get at what you need by keeping the house up with Jack stands and getting the pressure off that suspension, then attack the hardware.  But again, I don’t feel like I can see everything going on there.
