I second that. I swear it seemed like we had pickled beets with every flippin' meal when I was a kid. My dad absolutely loved them, but the rest of the family HATED them. But to each their own.

Totally agree. If I wanted a beet I'd just save the time and go eat some dirt out of the backyard. But my wife loves them so they are still in our garden every year.

Tested a couple beets today. 2 days early but had to do it. Very good! The recipe called for 2 cinnamon sticks. Just dandy!!

Love pickled beets but I think I'd be tossing the eggs to my dogs. Had a bad experience with pickled turkey gizzards one time, eggs are too closely related for me....
