NON MAYO COLE SLAW

I was going to ask this in the salad post, but it has gotten quite long and I thought this might deserve its own spot.

I am a fan of mayo type slaw, but lately I have been experimenting with non-mayo types. Can't seem to get it just right.

Looking for a crunchy vinegar/sweet taste with anything else added which may enhance the flavor. Any ideas will be appreciated.

My grandmother use to make a vinegar/sugar coleslaw that i wish i could duplicate. I can still taste it if i think about it. No mayo, she used white sugar in the vinegar to take some of the bite out of it. Man it was so good. I will have to ask mom if she has a true recipe.

Asian Style Slaw

1 bunch [6 large] scallions, trimmed and thinly sliced

2 16 oz bags coleslaw mix

1 small red onion

1/4 cup soy sauce

1/4 cup lemon juice

1/4 cup vegetable oil

2 tbls grated fresh ginger

2 tbls white vinegar

2 tbls dark brown sugar

2 tsp sesame oil

2 tsp sesame seeds

1 tsp salt

20 grinds of black pepper or to you taste

rough up the scallion slices a little with your fingers so all the little layers of the scallion whites seperate. toss the coleslaw mix or both kinds of cabbage, the red onion and scallions together in a large bowl until everthing is mixed well. you can make this part a day in advance as long as it's refrigerated.

before serving, simply bring the slaw back to room temperature, make the dressing and toss. stir the remaining ingredients together in a small bowl until blended, then pour over the vegetables. serve within 1 hour of dressing or the cabbage will get wilty and sad. good luck.

RAMEN NOODLE SALAD

1 head Napa Chinese cabbage, shredded

5 green onions, chopped (tops included)

1/2 c. butter

1 (2 1/2 oz.) pkg. Ramen noodles, broken

1/2 c. sesame seeds

1/2 c. almonds

DRESSING:

3/4 c. sugar

3/4 c. salad oil or olive oil

2 tbsp. soy sauce

1/2 c. red wine vinegar

Shred cabbage and combine with onions. Set aside. Brown noodles, sesame seeds and almonds in butter and drain on paper towel. Mix dressing and chill. Assemble approximately 20 minutes before serving.

A few days ago, after a bit of urging, I got a recipe from a friend of mine, with some different twists. I had her slaw last year and have been trying to duplicate it, without success. Never would have figured it out.

Slaw, like many dishes, is a matter of individual taste, this suits mine to a "T".

A head of cabbage or a bag of slaw mix

1 cup diced celery

1/2 cup cut green onions

1/2 cup cut radishes

1/2 of a green pepper (chopped fine)

teaspoon salt

Soak in chopped ice for at least and hour

Heat to boiling---

1/2 cup cider vinegar or rice wine vinegar

1/2 cup water

1 cup sugar

1 tsp mustard seed

1 tsp celery seed

pour over drained cabbage while hot, place covered in container in refrigerator until cooled. Will keep a couple of weeks.

that's what i was thinking as well. i am going to try it this weekend. waiting for my new grandaughter to be born so all my meals so far are planned to be quick ones, but i want to do this with full preperation. good luck.

    • Chicken mine,  melded in Mccormick poultry seasoning for 24 hours.  Grill will get a break till the frigid temps go away!
    • we had some nice weather yesterday and this conundrum was driving me crazy  so I drove up to the house to take another look. I got a bunch of goodies via ups yesterday (cables,  winch ratchet parts, handles, leaf springs etc).   I wanted to make sure the new leaf springs I got fit. I got everything laid out and ready to go. Will be busy this weekend with kids stuff and too cold to fish anyway, but I will try to get back up there again next weekend and get it done. I don't think it will be bad once I get it lifted up.    For anyone in the google verse, the leaf springs are 4 leafs and measure 25 1/4" eye  to eye per Yetti. I didnt want to pay their markup so just got something else comparable rated for the same weight.   I am a first time wheel house owner, this is all new to me. My house didn't come with any handles for the rear cables? I was told this week by someone in the industry that cordless drills do not have enough brake to lower it slow enough and it can damage the cables and the ratchets in the winches.  I put on a handle last night and it is 100% better than using a drill, unfortatenly I found out the hard way lol and will only use the ICNutz to raise the house now.
    • I haven’t done any leaf springs for a long time and I can’t completely see the connections in your pics BUT I I’d be rounding up: PB Blaster, torch, 3 lb hammer, chisel, cut off tool, breaker bar, Jack stands or blocks.   This kind of stuff usually isn’t the easiest.   I would think you would be able to get at what you need by keeping the house up with Jack stands and getting the pressure off that suspension, then attack the hardware.  But again, I don’t feel like I can see everything going on there.
