well guys i just did my first batch of smoked eggs, and am really glad i did, turned out great, and per leakys egg salad recipe, made some into the egg salad which also was pretty dang good, cudos to all for the inspiration

and ideas,and am now a believer in "smoked eggs". already thinking about the next batch,

I may have to add "a smoked egg a day keeps the doctor away", like eyeguy now!

Thats Cool! My greatest joy of cooking is to try something new and it ends up tasting just as you imagined it would. Always scary when you are testing it out on family, but if its not what you thought, at least it's only family. wink

I should have taken pics, but I smoked my first eggs last night. Thanks to all of you for planting the idea in my brain. I had trouble keeping my temp regulated on my propane smoker, since at it's lowest setting it was 190 degrees. I could maintain 150 with the door propped open but that would let too much smoke escape. In the end, I got good smoke going and would heat up to around 175-180 then cut the heat. Once it got down to 140-145 degrees I turned the heat back on to low. Only had to do this cycle twice and the eggs still turned out great.

How To Boil An Egg (Don't Skip This Part!!!)

Think you know how to boil an egg? Think again! Even the most famous cookbooks (including The Joy of Cooking) have it all wrong. They tell you to cover the eggs with cold water.

This is all wrong. Bring your water to a boil FIRST, then add your eggs. The easiest way to do this is to use a soup spoon -- put the egg into the spoon, then lower it carefully into the boiling water.

Make sure your eggs are at room temperature. Otherwise, the shell will split once you lower them into the boiling water, and you'll have eggwhite leaking from the shell.

Why boil the water first? Because when you put your eggs into boiling water, the hot water will cause the interior of the egg to shrink away from the shell, which makes it really easy to peel.

And isn't peeling boiled eggs the hardest part? Now you know how to boil an egg -- and peel it with ease -- every time!

For boiling 10 eggs: after you bring a large pot of water to boil, lower your eggs into it using a soup spoon. Then set your kitchen timer for 10 minutes.

After 10 minutes, turn off the heat and let the eggs sit in the water for 5 minutes. Then pour off the hot water and add COLD WATER to cover the eggs.

After a few minutes, pour off this water and add more cold water. In about 8 minutes your eggs will be cool enough to handle, and they'll peel perfectly every time.

Just tried this and it resulted in the most miserable failure known to man! I followed it to a 'T'.

lol I always put them in pan, bring to slow boil, boil 8 minutes then I let sit for 6 minutes. rinse till the are at a temp that I can handle them. Roll them and peel. usually one out of 12 will be a rebel or so. my wife lets them sit in the fridge for a day or 2 and peel as she wants one in a salsd. seams to work also.

I usually start with boiling water and room temp eggs, put them in on a boil for 8 minutes, turn off heat and sit for 6-8 minutes depending on how many eggs there are, and then into a bowl half full of ice water. They peel pretty easy to me!

made these for a rib fest recently. They went fast! Nice twist on a std. deviled egg...

12 eggs

3 tablespoons yellow mustard (eyeball it)

2 teaspoons (about a small palmful) smoked paprika, plus additional for garnish

6 pieces thick-cut bacon - diced very small (can cook till crispy and chop to very small pieces also)

cheddar cheese - diced very small

1-2 tablespoons grated onion (grate it, don't dice it)

A few dashes hot sauce (add more if you like it spicy!) I used smoked Chipolte tobassco

2 tablespoons mayonnaise (eyeball it)

Salt and freshly ground black pepper

remove the yolks, smash up with a fork while adding all the rest of the ingredients, replace in smoked egg white, chill for a couple hours before serving. VERY TASTEY!

Hint: Can use small ziplock bag with corner cut off to make a 'frosting bag' filled with the yolk mixture. squeeze bag to fill each white. much easier than spooning mixture into egg whites.

Smoked pickled eggs??? Now your talking. I just made another regular batch Sunday. I cannot believe how fast people eat them. Has anyone pickled them yet?
