Jerky making/dehydrator question

went with the cracked pepper and garlic tonight. Its all I could find around here. I added a little mesquite flavored liquid smoke. Just 1 tablespoon for 2 pounds of ground beef.

will put in the dehydrator tomorrow and report back.

Reinhard - I like your post about using our own ingredients. I have tenderquick at home. My grandfather like to use hickory smoked salt for making sausage. That is a great seasoning to have in the arsenal. I love grilling pork chops with hickory smoked salt and garlic powder. I might have to come up with some new homemade jerky ideas.

i have never used hickory smoked salt. i bet that is good. however when making your own jerky i would not use any salt in the mix. tederquick is salt, some sugar and some nitrates. so adding salt and using tenderquick would make it more salty than i would want it in my opinion. but using smoked salt on foods such as you mentioned is something i want to try. it would be a nice addition to a rub reciepe for ribs for example. good luck.

Try FleetFarm. I think my dad found it down there when he was having trouble finding it other places. Otherwise, the Cub in White Bear Lake has it, but you probably don't want to drive up there.
