My grandfather like to use hickory smoked salt for making sausage. That is a great seasoning to have in the arsenal. I love grilling pork chops with hickory smoked salt and garlic powder. reinhard1 Posted January 6, 2012 Share Posted January 6, 2012 i have never used hickory smoked salt. i bet that is good. however when making your own jerky i would not use any salt in the mix. tederquick is salt, some sugar and some nitrates. so adding salt and using tenderquick would make it more salty than i would want it in my opinion. but using smoked salt on foods such as you mentioned is something i want to try. it would be a nice addition to a rub reciepe for ribs for example. good luck.
