White Chili Recipe??

Our daughter turns the big 1 year old next weekend and the wife and I thought that it would be kind of cool (and fairly easy) to make like 3 different kinds of chili for the people coming to the party. I searched the history and found lots of chili recepies but none for a white chili, curious if anyone has a good recipe? Thanks in advance!!

I guess it's not really 'white chili' but it isn't regular chili either but it's tasty.

Pork Chili:

2-3# Pork Steak

2-3# Pork Tenderloin

1 Large Onion

Cut off port fat,cut into small cubes. Sauté pork steak, pork tenderloin and onion in oil until pork is cook through. Set aside.

Add:

3 T. Chili Powder

2 t. garlic, diced

1 t. cumin

1 Can Ro-Tel regular tomatoes

1 can Ro-Tel Mexican tomatoes

2-8 oz. cans of tomato sauce

Combine above ingredients with cooked pork and onions. Simmer four hours or put in crock pot for 8 hours on low.

SPANISH RICE:

1/4 cup butter

1 cup white rice

Saute above ingredients until golden brown.

Add:

1/2 cup onion

1 can small tomato sauce

1 T. crushed garlic

1/2 t. cumin

1 T. Chili powder

1/4 t. salt

2 cups chicken broth

Cook until rice is tender. Add pork chili on top of rice.

Heres an easy white chicken chili recipe.

2 cans rotell diced tomatoes and green chilis

4 cans great northern beans

1 can chicken broth

1 pint heavy whipping cream

4 boneless chicken breasts fried and chopped

1 tablespoon cumin

1/2 tablespoon garlic salt

1 cup of water thickened with flour

Pour the contents of each can into a large crock with spices and cream, heat slowly up to a medium heat, add water and flour to thicken to consistency you like and serve. I like to keep 2 cans of beans out of the mix untill I start to thicken it as the beans tend to break down from heat and stirring. I spice my chicken breasts with garlic salt and onion powder pan fry them and then dice them up and throw the chunks in. In a pinch you can use canned chicken but it isn't as flavorfull.

I just made this tonight. While I haven't had many other white bean chicken chiles, I love this stuff. Boss had brought it to work and go the recipe from him.

Ingredients:

2 tablespoons olive oil

2 boneless chicken breast halves, diced

12 to 16 ounces chicken sausage, such as chicken apple sausage or chicken other smoked chicken or turkey sausage

1 cup chopped onion

4 cloves garlic, minced

2 cans (about 16 ounces each) Great Northern Beans, drained and rinsed

1 1/2 cups tomatillo salsa

1 cup chicken broth

1 can (14.5 ounces) diced tomatoes with juice, fire-roasted, chili-style, or plain

1 cup frozen corn kernels

2 tablespoons finely chopped jalapeno peppers, or mild chile peppers

1 1/2 teaspoons ground cumin

1/2 teaspoon salt

1/4 teaspoon ground black pepper

Dash cayenne pepper, optional

Preparation:

In a large skillet, heat olive oil over medium heat. Add the onions, diced chicken, and sliced sausage; sauté until onions are tender and chicken is cooked through. Put the drained beans in a 4 to 6-quart slow cooker; add the skillet mixture and all remaining ingredients. Cover and cook on HIGH for 3 to 4 hours or LOW for 6 to 8 hours.

HERE IS A SIMPLE ONE(MORE OF A GREEN CHILI). JUST OPEN ALL THE CANS, DUMP TOGETHER, HEAT AND EAT!

CHICKEN CHILI

3 CUPS CANNED CHICKEN

14 OZ CHICKEN BROTH

3 CANS GREAT NORTHERN BEANS (UNDRAINED)

8 OZ GREEN SALSA

8 OZ MOJACK CHEESE CUBED OR SHREADED

1 CAN GREEN CHILIS

My recipe changes each time I make it, but here is the general ingredient list. I may not get any awards for using a packet, but its easy and good. I've brought it to football parties and people have really liked it.

3-6 chicken breasts, cooked and cubed. (approx 1-2lb, depending on how meaty ya like it)

2 packets of McCormicks White Chicken Chili Seasoning.

2 or so cups of water or chicken broth (can be adjusted, i just keep adding until it's a little soupier than I want it and simmer it back down)

1 can of Great Northern beans (drained)

1 can of Navy Beans (drained)

1 can of some other type of white bean that I cant think of.

1 can of Rotel diced tomatoes and green chilies

1 can of diced chilies

1 can of corn (whole kernel, drained)

I just throw it all in a crock pot if I have time, otherwise in a stock pot and simmer it down. Pretty much any of the ingredients can be modified, omitted or doubled. It's pretty tough to screw this one up.

I buy this a few times a year for big games, hunting/fishing trips etc. I've never had a better tasting white chicken chilli than from Woody's. Stuff is incredible. I might just have to get my hands on some this weekend.

It is right down the street from my work and its so tempting to go there weekly! Luckily my significant other doesn't like beans so when I bring it home for myself she never eats it smile

A friend of mine is a bartender there he is also a big time bass fishermen. Next time you go there look for a younger bald guy and sit down at the bar and talk fishin!

Woodys white chili is the BOMB
