Also just called Mexican corn because it's popular with street vendors and sold on taco trucks. You just oil some corn and grill it until it's done. Meanwhile... mix a couple of tablespoons of mayonnaise and a couple of teaspoons of lime juice together. Adjust the lime juice to taste. In another bowl take a couple of tablespoons of finely grated parmesan cheese, 1/2t chili powder, 1/8t to 1/4t cayenne, 1/4t cumin, 1/8t seasoned salt. When the corn is done, paint on some of the lime mayo, then sprinkle with the cheese and spice mixture. Quote Link to comment Share on other sites More sharing options...
reinhard1 Posted June 6, 2011 Share Posted June 6, 2011 that looks very tasty. i soak the corn with the husk on in the sink with cold water for 5 hours. then i put them on the grill till they get good and charred. i then have melted butter and garlic salt and other spiced ready for who ever wants to dress them up. i think this is a common way to do it but i'm ready for other great ideas such as yours. good luck. Dark Cloud Posted August 6, 2011 Share Posted August 6, 2011 3rd Eye - dont get me wrong, that looks awesome but I stay simple with corn. Most of the time we steam not boil it for about 6-8 minutes. Sometime i'll grill em on the top rack. A little butter and salt, thats it... I had our first corn out of my dads garden a few days ago, some local farmers had it about a week and a half ago... My father takes his corn quite serious, lol. He actually starts em from seed in a greenhouse then transplants them. KEN W Posted August 6, 2011 Share Posted August 6, 2011 I do the same thing.I started 3 kinds in my greenhouse.Ate Northern Super Sweet last week.Next up this week is Mirai 421 white corn.Then 277 A bi-color and around Labor Day....Vision Super Sweet.I love being able to eat sweet corn every day for a month if I want to. reinhard1 Posted August 17, 2011 Share Posted August 17, 2011 BARBECUE CORN:pulse 6 tbls butter with 1 garlic clove,1/4 cup barbecue sauce and 1 tbls ancho chile powder in a food processor until smooth. brush 4 ears corn with three-quarters of the spiced butter and wrap in foil. grill over medium-high heat, turning often, until tender, 15 minutes. brush with the remaining spiced butter and season with salt. good luck. When I used to work on the road a buddy of mine would throw corn in a microwave husk and all and it was good. I usually just boil mine in water with about 1/4 cup of sugar added to the water. Moose Posted August 26, 2011 Share Posted August 26, 2011 Coborns has excellent corn this year and it's been on sale quite a bit..Have the kids shuck the corn add it to enough cold water to cover it. Add sugar and lemon juice to taste bring to boil. Boil for 2 min remove from heat. Cover and let sit for 10 min=Awesome.Roll in butter and salt to taste.
