I worked as a dock boy on Winnie as a kid. I had to clean 100-200 perch a day, for guests, on average. I don't have a bragging bone in my body, but I could clean 5 perch to this guy's one, completely boneless, without meat loss. We used electric fillet knives, and once you have the knack for it, it is hands down the fastest process there is. I hope this doesn't come off sounding smug--that is certainly not my intent. I am just saying, keep your options open. On the other hand, I have never seen this particular process done, and it was one neat to watch... It goes to show that "there is more than one way to skin a...perch " smile

Even if it could be sped up to 10 seconds, and I can see where that would be possible, he does (as BrdHunter01 mentions) still have the rib bones inside the cavity. Factor in trying to get the rib bones out and in addition to butchering your fish you are gonna have to tack on 15 more seconds at least... Not real impressive by me--just my opinion.

its a cool trick

some people like bone-in fish to fry, they think it increases the flavor. I'd say if he was doing it full speed it'd take 25 seconds, not 10.

the best thing is there's no mess - no scales, no skin flaps, just one nice piece (i tried it on a buncha perch on Sunday)
