picksbigwagon Posted January 1, 2010 Share Posted January 1, 2010 Okay, gonna share this recipie here, we are having it for dinner tonight and lets face it, anything in the crockpot is pretty simple cooking:1 pound chx breasts (don't cut up or anything)2 cans of black beans1 can of corn1 can of rotell1 jar of your favorite salsa1 onion choppedsome cumin, cayanne pepper (if you like) 1 tablespoon chopped garlicfresh cilantro1-2 limes juiced, depending on quality of limesIn the crockpot I start with a little nonstick cooking spray, and I season the chicken breasts (you can even use frozen) with the cumin, cayenne, salt and pepper. then layer the onions on the bottom, then the chicken, then the corn, rotell, black beans, and finally the salsa. Put it on high for 4 hours or low for 8 hours. At the end of cooking, shread the chicken in the crockpot, add lime juice and chopped fresh cilantro. Serve with Tortilla's or lettuce leaves. I will make a pakcage of Spanish rice to serve with it as well. picksbigwagon Posted January 3, 2010 Author Share Posted January 3, 2010 ours came out a little soupier than usual which I think was from the onions (I try to use dehyrdrated onions in the crock since fresh ones really add a lot of liquid) and I used frozen corn too which added to the liquid. I guess if I had thrown the baggie of spanish rice in the crock it would have taken care of the extra liquid.....I am making pork chops tomorrow night, I will share that recipie tomorrow night.... Phred52 Posted January 6, 2010 Share Posted January 6, 2010 picksbigwagon, Here's a simpler recipe fo Crockpot Fajitas. 1.5 # boneless/skinless Chicken breasts, 2 cups water, 1-4oz can of chopped green chilis, 1 packet of Lipton Onion dried Soup mix. About 1 cup of thinly sliced Green Peppers and an equal amount of thinly sliced onion. Slice the Chicken into small pieces so it'll shred easily after it's cooked, put chicken, water, chilis, and onion soup mix into Crock pot on med/low for 6 hours or so. About 1/2 hour before serving, saute the onions and peppers together in a small amount of oil until they're soft, (NOT fried). Serve as a "Build your own" on Buritto size tortillas with the onion/peppers, sour cream, shredded cheese, shredded lettuce, diced tomato or salsa, black olives, or what ever you like on your fajitas. I serve these to the gals on my daughters dance team and they all tell their moms to get my recipe!
