Just a picture from the Crappies my dad and I caught this weekend that were out of the frying pan

I made up this new batter. It turned out really nice. Crunchy, light and flavorful.

It almost seemed like the batter they use on cheese curds at the state fair but only better

Alright soak the fillets in MGDL for 5 min before the batter

The batter was made of eggs, flower and MGDL to a consistinsey of pancake mix

Cook em in Canola oil until golden brown

Wow! Between reading who ya caught them with and seeing the fish and I swear I smelled them, I am now hungry and there is a tear in my eye. Looks great! I just got done eating this weekends crappies 10 minutes ago! mmmmmmm........
