duck/goose appetizers

I need to bring some appetizers to a party this weekend. I have some breasted out duck and canadians. Any ideas for great make ahead appetizers? Won't have access to a grill at the party.

Marinate or brine them and then smoke them. Slice about 1/4" thick across the breast and arrange pin wheel fashion on a serving platter. Mix up a small bowl of 1/3rd dijon mustard, 1/3 mayo (or miracle whip) and 1/3 honey. mix well and place the bowl in the center of your meat pin wheel, a box of fancy tooth picks in front of the meat and you are golden! Simple easy and no cooking... guaranteed to be gone faster than Aunty Emms deviled eggs!!! grin.gif

Had some this week at pheasant camp that were marinated in soy sauce and garlic powder for 24 hours and then sautted with onions. They were very good, although it did cut the duck taste too much for me. The guys that don't typically like duck were very impressed.

I usually butterfly them, stuff them with cream cheese and jalapenos, close them and wrap them in bacon. Stick a water soaked toothpick through them and throw them on the grill, on low, just until the cream cheese starts to ooze out. This is my favorite way to do duck and I will be doing them next week at elk camp. Good luck!

Sorry I didn't see this until today but here is one of my favorite duck recipes. It is very easy and gets rid of the waterfowl taste...actually tastes more like steak!

1/2 cup olive oil

1 tbsp liquid smoke

1 tbsp A1 steak sauce

1 tsp garlic powder

pepper and seasoning to taste

Slice duck breasts into strips. Marinate in above mixture for 4 hrs and grill on high heat for just a couple mins per side. Don't grill more than medium and they will have much more flavor and be more tender.

butterfly duck breasts and roll them in seasoned flour fry in a pan of veg oil, turns out just like fried chicken, if you want appetizers just cube up the breasts and cook the same way, think popcorn chicken only duck

    • If you really want to treat your wife (and yourself) with a remote operated trolling motor, the Minn Kota Ulterra is about easy as it gets.  Auto stow and deploy is pretty awesome.  You just have to turn the motor on when you go out and that the last time you have to touch it.   24V 80lb.  60 inch shaft is probably the right length for your boat.  They ain’t cheap - about $3k - but neither one of you would have to leave your seat to use it all day.
    • Wanderer, thanks for your reply. I do intend for it to be 24 volt, with a thrust of 70-80. Spot lock is a must (my wife is looking forward to not being the anchor person any more).  With my old boat we did quite a lot of pulling shad raps and hot n tots, using the trolling motor. Unlikely that we will fish in whitecaps, did plenty of that when I was younger. I also need a wireless remote, not going back to a foot pedal. We do a fair amount of bobber fishing. I don't think I will bother with a depth finder on the trolling motor. I am leaning toward moving my Garmin depth finder from my old boat to the new one, just because I am so used to it and it works well for me. I am 70 years old and kinda set in my ways...
    • Dang, new content and now answers.   First, congrats on the new boat!   My recommendation is to get the most thrust you can in 24V, assuming a boat that size isn’t running 36V.  80 might be tops?  I’m partial to MinnKota.     How do you plan to use the trolling motor is an important question too.     All weather or just nice weather?   Casting a lot or bait dragging?   Bobber or panfish fishing?   Spot lock?  Networked with depth finders?  What brand of depth finders?
