fav. way to prepare channel cats

Hey guys,

what is your fav. way to prepare channel cats? Leave them whole or fillet them out? I've had them once and didn't care for them...but I think it was the way they were cooked. Any ideas?

Fillet them out, and make sure you remove the mudline and any yellow fat on the flesh. Batter and fry, and you will have some of the finest table fare there is.

Agreed! Get rid of any funny-colored meat and use hot oil. YUMMY!

Here are a couple other topics on cooking channel cat:

The key points are:

1) Remove all discolored meat- Red tinted and yellowish tinted meat.

2) Cut fillets into smaller "fingers"

3) Fry quickly in hot oil!

Quick frying is the key, if you cook it slow, the meat absorbs the oil and gets real mushy.

According to the DNR the river isn't much worse than most lakes in the area as far as the consumption advisories go. Also removing the mudline and all the fat gets rid of alot of mercury and such.
