trout recipes

anybody got any good recipes for trout?

I was thinking about throwing them on the grill, but not sure how to go about it and what seasonings to use. i've made trout before and have not been very satisfied on how they turned out. Anyone got any really really good recipes?

i usually take a couple peices of tinfoil and double them up and make a little boat shape, then spray some pam on it, lay the trout skin side down, some people leave the heads on but i dont, take the rib bones out, then spread butter generously over the fish and sprinkle lemmon pepper all over, pile all the charcoal on one side of the grill and place the trout on the other side so its not directly over the heat, cook till the meat turns white, then just peel the meat off the skin with a fork, its great this way and if you get all the rib bones out the butter will desolve the rest of them during the cooking

i just use a knife and cut the whole rib cage area out, you loose a little meat, but nothing will turn me off of eating trout that chewing on rib bones, its just a nasty feeling crunching between your teeth

Here's one I like to do for stream trout.

Trout & egg breakfast:

Clean enough trout to fill a large frying pan. I leave the heads and skin on - just remove the entrails and the gills and wash well. Mix up some eggs and milk as though you are making scrambled eggs. Dip trout in the egg mixture and roll in cracker crumbs. Fry in butter until almost done - then add the remainder of the egg mixture. Cover, and cook until egg is done. Makes a great breakfast!

The entire spine and ribcage will come out in one piece after the trout are cooked.

If you can , filet them...Trout over 13" are the best for this, the smaller ones it doesn't seem to work.

On a charcoal grill with the coals on the sides, we put alum foil down on the grill rack. Lightly spray with oil. Put the filets on the foil and grill.

If you want a smoked flavor- put wood chips on the coals and smoke them.

We don't use a lot of coals and it usually takes an hour and a half to cook. Reapply wood chips as needed. We use apple most of the time.

It is nice, very few/no bones and easy to eat.

    • If you really want to treat your wife (and yourself) with a remote operated trolling motor, the Minn Kota Ulterra is about easy as it gets.  Auto stow and deploy is pretty awesome.  You just have to turn the motor on when you go out and that the last time you have to touch it.   24V 80lb.  60 inch shaft is probably the right length for your boat.  They ain’t cheap - about $3k - but neither one of you would have to leave your seat to use it all day.
    • Wanderer, thanks for your reply. I do intend for it to be 24 volt, with a thrust of 70-80. Spot lock is a must (my wife is looking forward to not being the anchor person any more).  With my old boat we did quite a lot of pulling shad raps and hot n tots, using the trolling motor. Unlikely that we will fish in whitecaps, did plenty of that when I was younger. I also need a wireless remote, not going back to a foot pedal. We do a fair amount of bobber fishing. I don't think I will bother with a depth finder on the trolling motor. I am leaning toward moving my Garmin depth finder from my old boat to the new one, just because I am so used to it and it works well for me. I am 70 years old and kinda set in my ways...
    • Dang, new content and now answers.   First, congrats on the new boat!   My recommendation is to get the most thrust you can in 24V, assuming a boat that size isn’t running 36V.  80 might be tops?  I’m partial to MinnKota.     How do you plan to use the trolling motor is an important question too.     All weather or just nice weather?   Casting a lot or bait dragging?   Bobber or panfish fishing?   Spot lock?  Networked with depth finders?  What brand of depth finders?
