Sherry Sauce: 1 c. chicken stock1/4 c. sherry cooking wine1/2 tbsp worcestershire sauceseasoned saltcouple drops hot sauceCombine rabbit, water, salt and vinegar in bowl and let stand for 2 hrs. Heat oven to 350. Coat rabbit pieces with flour, salt, and pepper mixture. Melt butter in oil in a large skillet and brown rabbit. Transfer to a 3 qt casserole dish and add the mushrooms. Combine with the sherry sauce ingredients. Cover and bake until tender, about 1.5 hrs. If you want something more simple, just cover the rabbit in flour and seasoning and fry up. Deitz Dittrich
There was a guy I knew up in Bemidji who made the most killer Rabbit Chili... yowzers was that good! As far as I knew it was just chili that he used rabbit meat for instead of beef?

That does sound good- I do similar thing with venison and grouse cubed up and just use the Carol Shelby packed mix and spruce it up with black and pinto beans instead of kidneys, and lots of chunks of tomato, green pepper, and onion. Yummmmmmmm
john.wells
just realized that the title of the forum is a limerick of it's own- there once was a man who shot a rabbit; he didn't know how to prepare it...... OK it's late and I'm getting punchy.................................
Whoaru99
Usually I just season, brown, and cover with your favorite "Cream of" soup. Then simmer, bake, or crockpot until the meat is falling off the bone.
GatorBait
Agreed about the cream of soup and crock pot. Yum Yum, I do the same with pheasant, a very good treat.
