If you've already gotr the cleaned meat, that's 90% of the battle. I just did a Google search and found roughlt 15 different recipies.

They all sound tasty. I had Turtle soup a few times as a kid. Soul food style with greens and corn bread. It was great.

I used to be a catering cook for a while, one of the other cooks was telling me about it. You like soak the meat in milk for a day then soak it in salt water for a day[or vice versa, I forget]. Then you flour and sautee' in butter. This recipe was picked up by his father when he was a chef at a real fancy hotel. I guess the meat will still move after a couple of days too.

Anyone else here of this method?

If it was me I would cut the meat up in stew size pieces, flour it and fry it in butter or margerine for a while with some onions (covered) and let it simmer for a while with a little water. I would add that to a bigger pot and maybe add some potatoes and carrots, what ever other vegetables you like, Maybe you could even put a little bouillon in there if it's a little to bland. Throw some Wild Rice(already cooked) in there before the vegetables get done. MAn I'm going to have to go get me a turtle now bwcause that sounds good. HA HA HA..

Nahhh you don't have to pressure cook it. A buddy of mine fries it like chicken, and he throws it in the oven for about an hour or so with a little water in the bottom of the roaster, man it is tender and tasty. Like with any meat it is how it is handled before you cook it.

7 different kinds of meat in a turtle and there all good if made right. the less stress an animal has the more tender they are. and how they are cooked is also very important. no need for presure cooking. only if you are canning meat deos it have to be presure cooked.

That is a rumor that has been around for years. there are two different kinds of meat light and dark just like on a chicken, I have been trapping and butchering turtles for years, and our local sportsmans club has an annual turtle soup feed every October we make about 110 gallons. I will post you a recipe tomorrow.

Whoa. Wish I wouldve found this post earlier. I was bass fishing last Friday and caught a snapping turtle on my popper. I thought it was a fish of a lifetime until a big ol' shell surfaced up. It had to be about 2 1/2 ft across, pushing 15lbs. I just cut my line and it swam away with my popper. frown.gif I told my coworker about it and he's been giving me dump about it ever since. Told me I shouldve kept it. i found a site www.exoticmeats.com and they have a 5lb bucket of turtle meat going for almost $20/lb. I wish I wouldve kept it. I wouldnt know where to start with it though.

I see you have gone from "water" to "wire". Nice to see

the edit, but, are serious on your 1st question??? Let

me get this straight, you are not sure on how to insert

a wire up a turtle's rectum? My only advice call you

local proctologist for assistance! Anyway, just keep

pushing the wire up the rectum, you will start to hear

and feel the spine break up. Plus, you will see the

legs go limp. Wire gauge, play around with it, until

you are successful.

Always necessary to have a sense of humor on this site!

Some more advice, if the diameter of the wire is larger

than the diameter of the rectum, probably not going to

work!
